These adorable tiny appetizers are a success every time. Serve with a fine mustard while warm or at room temperature. When unannounced visitors arrive, just thaw these out of the freezer and heat them up.

Ingredients

  1. ½ cup butter, melted
  2. 1 pound confectioners’ sugar
  3. 1 ½ cups peanut butter
  4. 1 teaspoon vanilla extract
  5. 2 cups semisweet chocolate chips
  6. 1 tablespoon shortening

Instructions

  1. Combine the melted butter or margarine, confectioners’ sugar, peanut butter and the vanilla together and mix well. Refrigerate for 1 hour or until firm. Roll into 1 inch balls and place on waxed paper.
  2. In the top half of a double boiler melt the chocolate chips and shortening, stirring constantly. Use a toothpick to dip balls into the melted chocolate, leaving a small uncovered area so balls resemble buckeyes. Place balls on waxed paper. Use fingers to blend in toothpick holes. Refrigerate until chocolate is firm. Enjoy!

They seemed to turn out pretty well, but what sized scoop could you use to get the amount of buckeyes the recipe suggested the yield would be? I only got 27 with the cookie scoop I used! On the upside, they were nice and large! I also used one additional teaspoon of vanilla, it gave me a more rollable texture.

I’ve made these many many times at Christmas and this year I discovered 2 things: 1. You can use crunchy PB if that’s what you’ve got in the pantry and 2. I like using LESS powdered sugar (12 oz instead of 16 oz) because they’re not so overwhelmingly sweet. Doing it this way, I ended up with 72 balls to dip. I always freeze the PB Balls before dipping so the chocolate firms up fast. I also “pinch” the toothpick hole closed so they look better.

These seemed to be a big hit. A little too sweet for me. I would recommend adding a step to refrigerate again after rolling the balls, When I went straight from rolling to dipping, they started to lose their form. Popped in the freezer for 5 minutes again and then it was fine.

Used a flexible silicon tray to make brownie sized buckeye squares. Followed recommendations in the reviews to reduce the powdered sugar to 3 cups. Turned out so good!

major spin. I modified this by adding 2-3 cups of crushed popped rice cereal (aka rice krispies) and only use 1 cup of powdered sugar. the rice cereal gives it a nice crunchiness.

I had to add a little more powder sugar but this was a very good recipe to start with really.depends on the butter and creamy peanut butter you start with it’s all in the maker they should mix it till it’s a caky dry mix you should be able to dig out a little bit and roll into a ball and it not stick to you I it dose mix a little bit more sugar also. I used my left over sugar from my butter cream icing. So I sifted the sugar and dumped out the balls. This may help. I am so ready to eat these.

I had to edit the recipe since it was so dry, had to add extra butter and peanutbutter by a half cup. If you up the butter and peanutbutter by a half cup then it comes out perfect like the Buckeyes I grew up with.

Oh WOW. These are tasty!! Made as written. I used the microwave to melt the chocolate.(used bark chocolate) it came out creamy, & easy to dip. After rolling mixture into balls, I placed into freezer. highly suggest doing that.

I thought the recipe needed less powdered sugar. I will and have made it more than once. P.S. Be prepared to use lots of powdered sugar!

This was an excellent recipe! I ended up using less sugar when I made it the second time and it was not as sugary and had more of a peanut butter flavor!
