Andouille Sausage Corn Fritters

Ingredients

  1. 2 cups all-purpose flour
  2. 1 tablespoon baking powder
  3. Pinch cayenne
  4. 1 teaspoon smoked paprika
  5. 1 teaspoon kosher salt
  6. Pinch cracked black pepper
  7. 1/4 cup sugar
  8. 1/2 cup finely diced andouille sausage
  9. 1 1/2 cups frozen corn kernels, thawed
  10. 2 eggs
  11. 1 cup whole milk
  12. 1 tablespoon chopped fresh thyme leaves
  13. 1/2 cup butter, melted
  14. 3 tablespoons canola oil

Instructions

  1. In a large bowl, whisk together the flour, baking powder, cayenne, paprika, salt, pepper and sugar. Add the sausage, corn, eggs, milk and thyme. Stir in the melted butter and combine well.
  2. In a large skillet over medium-high heat, add the canola oil and evenly coat the pan. Ladle 2 to 3 ounces of batter into the pan and shape into a mini pancake. Repeat to fill the pan. Cook for 2 minutes before flipping and cooking the other side. Repeat with remaining batter. Transfer to a serving platter and serve.

SO GOOD! My husband doesn’t like sausage (sorry Aaron!) so I left it out and served them under Sunny Anderson’s BBQ Short Ribs. BEST. MEAL. EVER. These are great and easy!

These were my first attempt at fritters…followed the recipe with minor changes. Added a little more corn and andouille and used dried thyme. Very good…even my 10 year old ate them up!

My family doesn’t eat pork also, soI use hot Italian turkey sausage or turkey sage sausage with cayenne. If some one is a vegetarian use veggie sausage as a substitute. I also took Serna’s advice and added cornmeal
