Amish Friendship Cake

Sourdough starter is used to make this Amish friendship cake. If you don’t have any, you can build some using the instructions and give them to your friends.

Ingredients

  1. 2 cups all-purpose flour
  2. 1 cup sourdough starter
  3. 1 cup white sugar
  4. ⅔ cup vegetable oil
  5. 3 large eggs
  6. 1 ½ teaspoons baking powder
  7. 2 teaspoons vanilla extract
  8. ¼ teaspoon salt
  9. 1 cup chopped walnuts
  10. ¼ teaspoon baking soda

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease two 9-inch loaf pans.
  2. Mix flour, sourdough starter, sugar, oil, eggs, baking powder, vanilla, and salt together in a bowl. Stir in chopped walnuts. Stir in baking soda and pour batter into the prepared pans.
  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 minutes to 1 hour.
  4. Bananas, dates, or raisins can be added for variety.
  5. Dissolve 1/2 teaspoon yeast in 1 ounce warm water in a non-metal bowl. Add 1 cup flour, 1 cup milk, 1 tablespoon white sugar, 1 tablespoon vinegar, and 1/2 teaspoon salt; stir with a non-metal spoon until creamy. Cover bowl with plastic wrap and let stand in a warm place for two days to ferment. It will become bubbly and have a sour odor. Do not place in the refrigerator.
  6. On days 2, 3, and 4: stir.
  7. On day 5: add 1 cup flour, 1 cup sugar, and 1 cup milk; stir to combine.
  8. On days 6, 7, 8, and 9: stir.
  9. On day 10: add 1 cup flour, 1 cup sugar, and 1 cup milk; stir to combine. Reserve 1 cup starter; pour the remaining starter, 1 cup each, into 3 containers to give away to friends if desired.

I agree with some others that it seems a bit dry but the flavor is good. I used pecans and 1/2 can of fruit cocktail in place of the suggested walnuts, banana slices and raisins. The best part is that it gave me a reason to visit my neighbors.

I can’t tell you how many times I’ve made this and it’s never come out bad. In my opinion, it’s more like a pound cake. You can add just about any of your favorite things…raisins, chocolate chips and nuts are only a few suggestions. The pudding helps but I’ve left it out when I didn’t have any. It didn’t ruin it at all. And you can always freeze a cup of the “starter” for another time. I’ve done this before and the end result still came out fine. The fact that it makes 2 loaves, you can always share one.

This is hard to rate, because it takes more than 1 day to complete…if you have the time and space it is a GRAT way to give to friends, and it is also, a great starter batter to make so many variations fo the cake….TASTE: it is WONDERFUL, and if there are young childern, it is fun to add the ingredients when they come home from school, and gives them a feeling of being a “BAKER” with PRIDE!! I use this around the holidays..
