Amazing Mexican Quinoa Salad

This one is a favorite of my child, plus he gets a serving of milk, fruit, and veggie with it!

Ingredients

  1. 2 cups cooked quinoa
  2. 1 (15 ounce) can pinto beans, rinsed and drained
  3. 1 (15 ounce) can kidney beans, rinsed and drained
  4. 1 (14 ounce) can corn
  5. 1 red onion, chopped
  6. 1 cup cooked brown rice
  7. 1 red bell pepper, chopped
  8. ¼ cup chopped fresh cilantro
  9. ¾ cup olive oil
  10. ⅓ cup red wine vinegar
  11. 1 tablespoon chili powder, or to taste
  12. 2 cloves garlic, mashed
  13. ½ teaspoon salt
  14. ½ teaspoon ground black pepper
  15. ¼ teaspoon cayenne pepper, or to taste

Instructions

  1. Mix quinoa, pinto beans, kidney beans, corn, red onion, brown rice, red bell pepper, and cilantro together in a glass or plastic container with a lid.
  2. Whisk olive oil, vinegar, chili powder, garlic, salt, black pepper, and cayenne pepper together in a bowl; pour over quinoa mixture and toss to coat. Cover bowl with a lid and refrigerate until flavors blend, at least 2 hours.
  3. Stir salad again before serving.

This is delicious. Absolutely love it for a week of easy lunches packed with a variety of veg. It is pretty versatile too if you have different types of beans or a white onion instead of a red one, green pepper instead of red etc. I like a sprinkling of fresh chilli flakes when serving for extra spice.

Absolutely delicious, loved it. I only used 1 tsp of mild chilli powder otherwise followed the recipe. Yes a lot of olive oil but isn’t it good for us!

I don’t usually like quinoa, but yum!! Used only about 1/4 c of olive oil and it was still too oily for my taste- would use even less next time. Added some chopped cherry tomatoes that I had- perfect summer meal!

Delicious recipe but instead of mixing it all together, I sauteed it like I usually would with this kind of dish and added the cilantro on fresh afterwards.

I made this exactly as submitted. My first quinoa salad. We liked it and I will make it again. I did not use all the dressing – I added a little at a time until it looked right and had Tbsp or so leftover. Next time I will try reducing the amount of the olive oil by a couple to Tbsp.

I substituted chili powder (which I’m not too fond of the taste) with a tablespoon of paprika. I also did not have red wine vinegar, so I added malt vinegar instead. I think the oil is too much; half a cup of olive oil would be enough for 8 servings.

This was pretty dang tasty and alot quicker to make than what it says! Basically just chop it all up toss it all together (while quinoa and rice is cooking).. you don’t HAVE to wait for the flavors to set in.. its already delicious! But I can guarantee that the next serving, having been marinated, will be even better.

(hint): for first time quinoa cookers; when cooking the quinoa bring it to a good boil. Once quinoa is at a good boil turn the heat completely off. Then let sit with a tight fitting lid for the allowed amount of cooking time. Turns out great every time. This also works for bulgur wheat.

We don’t care for beans so I skipped those and added 1 lb. of diced chicken. Also skipped the cayenne pepper in deference to the younger kids. Delicious!

I made this today for dinner today. Pretty good. I cooked it however. Didn’t want to eat a cold meal . Lightly sauteed the onions and peppers, added the beans , cooked for about 10 minutes and removed from the stove. Added the grains, cilantro, and the dressing, mixed and let it stand.
