Ingredients
- 4 skinless, boneless chicken breast halves
- salt and pepper to taste
- ½ cup mayonnaise
- 2 cups Italian seasoned bread crumbs
Instructions
- Preheat the oven to 425 degrees F (220 degrees C). Grease a shallow baking dish.
- Season chicken breasts. Coat chicken on all sides with mayonnaise, and roll in bread crumbs until coated. Place coated breasts into the prepared pan.
- Bake uncovered for 30 minutes in the preheated oven, or until chicken is no longer pink in the middle and the juices run clear.

Most moist chicken I have ever baked a staple at our house , no fail juicy every time, I have used ranch dressing instead of mayo, just as good, have added ranch dry mix to breadcrumbs and if you like spicy add some cayenne pepper to breadcrumbs.
This recipe is the most perfect way to cook breast.. never dry and throat choking meat. We found this recipe, tried it and its Fabulous. I didn’t chance a thing.. its perfect just the was it is.. when we make chicken breast we alway cook extra.. perfect warm ups for 2 people and it dont take anymore time..❤❤ love it!!
This is a fan favorite in my house. I have a very picky eater child. He has liked this for years. There’s just enough spice but not too much for your picky eaters. Parents add more if you need it. However, what I like about this recipe the most is that it can easily go into different recipes the next day because it is perfectly spiced, but not too spiced…so you can totally change it up. Put it into tacos or quesadillas the next day, or on a salad, etc.
So simple and delicious. I messed up and put everything together in a mixing bowl and stirred it all up. Then dumped in a baking dish. Still turned out amazing

I looked this up as an alternative to using an Egg wash – cuz i’m all out of EGGS! LOL. I only had chicken tenderloins and Panko Bread crumbs. and after reading some other comments, I added some extra seasoning; garlic powder, chili powder, salt & pepper. It took 30 min @ 450 and was so easy, and to agree again with other folks here… my child who HATES Mayonnaise loved it. This is going to be in my rotation.

I just made this dish for the first time and I thought that 2 cups of bread crumbs was too much.. I used only 1-1/2 cups and that was still a little too much. I wasn’t a fan of the mayo but you couldn’t even taste it. The mayo is the reason why the chicken was so tasty & moist. As a kick, I added a pack of Ranch dressing mix to the bread crumbs. The recipes states to cook for 30 minutes.. Next time I’ll probably up it for another 5 – 7 minutes. I took a core temp of the chicken after it came out of the oven & it was at around 178 degrees.. A pretty good dish indeed.. I served it with Goya yellow rice

This was very tasty. I like easy recipes, and this definitely qualifies. I did add some seasonings to the mayo for extra flavor. I made will definitely make this again — maybe tonight, because last night’s meal had no leftovers!
great and easy recipe to make. was alittle bland for my liking. next time I will add a few of my favorite spices.
Add garlic, onion, Parmesan to bread crumbs or garlic croutons. Paint on Mayo! Can’t wait to try it.

This was so easy to make and really delicious. I did also some ranch dressing seasoning the mayo for a little kick and it was wonderful. I too cooked on a cookie sheet for 15 minutes on each side and it came out perfect!

Loved the simplicity of this dish! Most important is the chicken is so moist. I prefer to use Panko with Italian seasoning instead of bread crumbs as it is crunchier. Finally baked chicken my family LOVES! My college son like to wrap the chicken in tortillas with salsa.
It was too dry for me and not enough taste. I made it a second time and this time I made a side of 4-halved thinly sliced Roma Tomatoes, 4-thinly sliced green onions, 1-Tbsp crushed and minced garlic (about 4 cloves), 3-Tbsp minced Cilantro, 1/2 cup low sodium chicken broth, salt and Fresh Ground Blk Pepper to taste. pinch of red pepper flakes, simmered on low for about 15 minutes. Spoon onto chicken when serving. Adds moisture and flavor to the chicken.
