Ingredients
- 1 cup buttermilk
- ½ teaspoon hot sauce
- ⅓ cup tapioca flour
- ½ teaspoon garlic salt
- ⅛ teaspoon ground black pepper
- 1 egg
- ½ cup all-purpose flour
- 2 teaspoons salt
- 1 ½ teaspoons brown sugar
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon onion powder
- ¼ teaspoon oregano
- ¼ teaspoon black pepper
- 1 pound skinless, boneless chicken thighs
Instructions
- Combine buttermilk and hot sauce in a shallow dish; mix to combine.
- Combine tapioca flour, garlic salt, and 1/8 teaspoon black pepper in a resealable plastic bag and shake to combine.
- Beat egg in a shallow bowl.
- Mix flour, salt, brown sugar, garlic powder, paprika, onion powder, oregano, and 1/4 teaspoon black pepper in a gallon-sized resealable bag and shake to combine.
- Dip chicken thighs into prepared ingredients in the following order: buttermilk mixture, tapioca mixture, egg, and flour mixture, shaking off excess after each dipping.
- Preheat an air fryer to 380 degrees F (190 degrees C). Line the air fryer basket with parchment paper.
- Place coated chicken thighs in batches into the air fryer basket and fry for 10 minutes. Turn chicken thighs and fry until chicken is no longer pink in the center and juices run clear, an additional 10 minutes.

Made this in an oven air fryer and it didn’t crisp at all. Had to throw it in pan with some oil. Flavor was good but not intense enough for us.
Made it to the recipe. Moist, with good flavor. Marinated the chicken in the buttermilk mixture for about 45 minutes while putting together the rest of the meal. Coating was good, but lacking in “crunch”. Will make this again, maybe using crumbs or panko in the coating.

This was the first recipe I tried with my new air fryer and it is definitely a KEEPER! Full flavor and juicy pieces of chicken. I can tell you I won’t have any cravings for KFC or Popeyes in the near future and to think we are eating healthier and saving
We doubled this recipe to enjoy leftovers. We’re really happy we did! We allowed the chicken to marinade in the buttermilk-hot sauce for 8 hours before dipping and used cornstarch instead of tapioca flour. Seasonings were fine but some people would likely want more salt. I used parchment paper with a bit if oil to line the baskets and sprayed the dipped pcs with oil just before cooking. The Air Fryer is a perfect way to cook these. My new oven has an Air Fryer feature so we did some in the Air Fryer and most in the oven using the Air Fry mode. The OVEN needed a temp of about 425°f to get the same level of cooking as the air fryer did in the same time. With these changes, the results were great and definitely worth adding to our menu rotation. Tonight I’m going to reheat using the air fryer to crisp up the last of the leftovers. I’m expecting another great meal.
I don’t know how anyone could say this was bland (though I did use extra hot sauce). We hate plain in this house and I didn’t even need to use dipping sauce. This might be my favorite chicken I’ve ever made, and I make a lot of chicken. I used breasts and cornstarch in place of tapioca flour. Simply amazing! Definitely going in our regular rotation. The chicken was juicy, but I thought it could have used a bit of a kick. I saw another recipe where they used more of the hot sauce and marinated in the buttermilk and hot sauce first. I am going to try that. When I turned the chicken at the half-way point, I had to spray a bit of olive oil to a few areas where the flour was still visible.
Very good! I recommend it. I also did not have tapioca flour so I used tiger nut flour . The flavor was great. The chicken was very moist We will definitely make this again
I did not have tapioca flour so I just used flour. Good flavor, but am wondering if the number of steps could be shortened with similar results. Used an air fryer oven and the listed cook time was accurate.

This is the best air fried chicken I have had so far. My boys loved it too. I made chicken breasts instead of thighs and they came out juicy and delicious. I will definitely make again!

I’m the author of this recipe, and would suggest the reviewer who said it was bland, likely has outdated spices (or didn’t make it). Please try making it with new spices. I’m sure you’ll have better success.
