Aloha Chicken Burgers

Celeriac sticks that have been baked make a delicious side dish or even a snack on their own. A spicy homemade ketchup pairs well with the mild celery flavor. To get the crispiest fries, I tried two different techniques, and this was my favorite. I served it with my own ketchup prepared with harissa.

Ingredients

  1. 2 skinless, boneless chicken breast halves
  2. ¼ cup soy sauce
  3. 3 slices thick cut bacon
  4. 2 large hamburger buns, split
  5. 1 tablespoon softened butter
  6. ¼ cup teriyaki sauce
  7. 2 slices Swiss cheese
  8. 2 tablespoons mayonnaise
  9. 2 slices pineapple
  10. 2 slices tomato
  11. 2 slices of iceberg lettuce

Instructions

  1. Place chicken breasts into a plastic zipper bag with soy sauce, seal the bag, and marinate in refrigerator for 30 minutes. While chicken is marinating, place bacon in a large, deep skillet, and cook over medium-high heat, occasionally turning until evenly browned, about 10 minutes. Drain bacon slices on a paper towel-lined plate, and set aside. Spread cut sides of hamburger buns with butter.
  2. Preheat an outdoor grill for medium heat and lightly oil the grate.
  3. Remove chicken from soy sauce, and discard excess soy sauce. Place chicken breasts onto the preheated grill, and grill until chicken shows good grill marks, is no longer pink inside, and juices run clear, 4 to 5 minutes per side. When chicken is almost done, brush each piece generously on both sides with teriyaki sauce to finish grilling. Place a slice of Swiss cheese on each chicken breast, and cover with a lid to help cheese melt onto chicken.
  4. While chicken is grilling, spread buns open on the grill and cook until toasted and showing grill lines, about 2 minutes. Set buns aside.
  5. To assemble, spread grilled sides of each bun with mayonnaise, and top each bottom bun with a cooked chicken breast, 1 1/2 slices of bacon, a slice of pineapple, a slice from a head of lettuce, a slice of tomato, and top bun.
  6. If you don’t want to grill, loosely roll up marinated chicken breast with teriyaki sauce in foil, and bake at 400 degrees F (200 degrees C) for 20 minutes. Then open foil, and melt cheese on top.

Cooked the chicken in the crockpot with low sodium soy sauce and brown sugar, chicken fell apart somewhat so I brushed them with teriyaki sauce and cheese, place on foil and melted cheese in the oven. Sprinkled pineapple rings with brown sugar and grilled them. Followed all other steps exactly. My family loved it and will make these again.

Hubby gave it a 4 & I think it is a 5 star. Will make again but with these changes. We’ll probably use can slice pineapple or if a fresh one slice a lot thinner. We’ll also cu breast in half for thinner pieces & share a chicken breast. With a full breast, even sliced for easier grilling it was to much. The fresh sliced pineapple was also to think so everything slid around & was way to messy. We took others suggestion & used 1/8c soy sauce & 1/8c plus of pineapple juice. Initially I thought the marinade was to overpowering with soy sauce. We’ll have to cut the marinade to compensate for using the 1 chicken breast. Like others you may want to add a tish of brown sugar.

Easy to make and very tasty! Followed the recipe, added brown sugar to the soy sauce, as others had suggested and to the pineapple as it grilled. YUM! Only other change I made was to cook the bacon in the oven, as I was making double of the recipe. Everyone in the family loved it!

Pretty good! Made it on the stove. I sliced the chicken into strips to cook faster. Put olive oil and a little soy sauce in the bottom of the pan and cooked the chicken on med hi heat, last 10 mins put some teriyaki sause on them. Turned out great!

Quick, and great! Made a double recipe, the family loved it! Soy sauce alone for a marinade would have been too salty, so I cut it with 1 Tbs brown sugar and a 1/3 cup of pineapple juice. I halved and tenderized my chicken breasts with a meat tenderizer as well. That helped result in a very tender chicken fillet. Will make again!

Pretty good! Next time, make sure chicken pieces are thin (cut thicker pieces in half top-to-bottom), as there’s so much stacked on these that they’re hard to eat). Yummy served with apple cole slaw!

It was very good. I marinated in terryiaki sauce for a few hours and then added the soy when chicken was almost done being grilled. Excellent. My family of 5 was extremely satisfied!
