Ingredients
- 1 stick butter
- 1 cup heavy cream
- Salt and freshly ground black pepper
- 2 cups freshly grated Parmesan
- Pasta cooking water, as needed
Instructions
- In a saucepan or skillet, warm the butter and cream. Season with salt and pepper. Add the Parmesan and stir until melted.
- Toss to combine, thinning with pasta water if necessary.

This recipes is incredibly good, exactly as written. Don’t mess with the ingredients; instead, simply select the best quality ingredients. I used Kerrygold grass fed butter, fresh whole milk, and freshly grated Parmesan Reggiano. YUM!
Simple and quick sauce, very yummy!
Some modifications :
It was very rich with a half stick of butter. Lightly browned 2-3 cloves of garlic. Used food processor to freshly grate 50/50 pecorino Romano and parmesen. Generous black pepper and a pinch of nutmeg (fresh thyme instead would be delicious too). Threw in some roughly chopped sun dried tomatoes and dried porcini mushrooms that I had on hand. Reserved 1/2 C pasta water in case the sauce needed to be thinned. Delicious!!
I used unsalted butter and replaced the nutmeg a light dusting of oregano. Plus I never added salt and pepper. It tasted fantastic. So much better homemade.
This recipe just hit the spot and my kids loved it this recipe was so easy and quick I would highly recommend this
This recipe is tasty. I warmed the butter, cream and minced garlic in a crockpot before adding the salt, pepper and Parmesan. This was a great way to double the recipe and keep the sauce warm while our family arrived at different times. Plus, the sauce was still hot when we went back for seconds. So easy!
I added minced garlic & parsley to jazz it up a bit, let the sauce simmer then sit for about 15 mins. & it eventually thickened up ❤️
The flavor is perfect but mine was grainy, anyone know why?
mine had wonderful flavor but not creamy?? I used grated parm cheese – next time i will use a block of cheese and grate it myself
