Easy air fryer-made crispy potato tacos.

Ingredients

  1. 2 cups water
  2. 1 (4 ounce) package instant mashed potatoes (such as Idahoan® Buttery Homestyle®)
  3. ½ cup shredded Cheddar cheese
  4. 1 green onion, chopped
  5. ½ teaspoon ground cumin
  6. 10 corn tortillas
  7. 1 serving nonstick cooking spray
  8. ½ cup salsa verde
  9. ¼ cup crumbled cotija cheese

Instructions

  1. Heat water in a medium saucepan to boiling. Remove from the heat and stir in instant mashed potatoes. Mix thoroughly with a fork to moisten all potatoes and let stand 5 minutes. Stir in Cheddar cheese, green onion, and cumin.
  2. Preheat an air fryer to 400 degrees F (200 degrees C).
  3. Wrap tortillas in a damp paper towel and microwave on high until warm, about 20 seconds.
  4. Spread 1 tablespoon potato mixture in the center of a tortilla and fold over to make a taco. Repeat with remaining tortillas.
  5. Working in batches, place tacos in the basket of an air fryer. Spray the tops with cooking spray and cook until crispy, about 5 minutes. Transfer to a serving platter and repeat to cook remaining tacos.
  6. Drizzle salsa verde over tacos and top with cotija cheese.
  7. This recipe calls for instant mashed potatoes, but it’s also a great way to use up leftover homemade mashed potatoes.

Made with brand Idahoan Instant Mashed potatoes – Buttery Homestyle (my personal fav) and used thinly shredded Mexican blend cheese instead of cotija. Made half with corn tortillas and half with flour. 5 per batch and about 6 min per batch at 400 (my air fryer). We all agreed the corn is better but corn tortillas don’t hold as long. While I didn’t today, I could see adding a TBLS of butter or sour cream to the mashed potatoes. We loved everything about this meal – including how quick and easy it was to prepare! Served with Best White Queso by leahnwells from this site and tortilla chips for a full, flavorful meal! Thanks SLNicole! These will appear on my table many times in the future!!

I don’t think that the cheddar cheese made enough difference to be worthwhile. I really felt that I learned a cooking technique to use my airfryer. These tacos are very mild and would make a really interesting addition as a side to a Mexican menu.
