Air Fryer “Sun-Dried” Tomatoes

This past summer, I was faced with the dilemma of how to store my garden’s overabundance of grape tomatoes. The only solution I could think of was sun drying, but there wasn’t any sun. To the rescue, the air fryer! Because I only have a little air fryer, I wrote this recipe for 5 ounces (12 grape tomatoes), making it simple to prepare in smaller quantities. For rehydrating, store in an airtight container in the freezer. For salads, soups, sauces, etc., pack in oil and store in the refrigerator.

Ingredients

  1. 5 ounces red grape tomatoes, halved
  2. ¼ teaspoon olive oil
  3. salt to taste

Instructions

  1. Preheat an air fryer to 240 degrees F (115 degrees C).
  2. Place tomatoes in a small bowl. Add olive oil and salt. Stir until evenly combined. Transfer tomato halves to the air fryer basket, skin-side down.
  3. Air fry for 45 minutes. Using a spatula, smash tomato halves and air fry for an additional 30 minutes.
  4. Transfer tomatoes to a paper towel-lined plate and let sit for 1 hour. Repeat with remaining tomatoes you are needing to use.

Better than store bought. In my opinion make sure you store them in extra virgin olive oil in a glass jar.

Had a glut of tomatoes at end of summer. Wow this was such a quicker way of drying tomatoes. I did have to add an extra 20 minutes on top of the time in recipe, and also added italian dried herbs, but they are perfect and so tasty. So I’m now using this recipe for all of my tomatoes! Freezing them to use on pizzas in winter time. Thank you!
