Air Fryer Portobello Pizzas for Two

This baked tilapia recipe is incredibly simple. It is tasty, easy to make, and only requires a few simple ingredients.

Ingredients

  1. 2 tablespoons olive oil
  2. 2 portobello mushroom caps, gills removed
  3. 1 teaspoon Italian seasoning
  4. 6 tablespoons pizza sauce
  5. 5 tablespoons shredded mozzarella cheese, divided
  6. 2 tablespoons sliced black olives
  7. 8 pepperoni slices

Instructions

  1. Preheat an air fryer to 350 degrees F (175 degrees C).
  2. Rub 1 tablespoon olive oil over each mushroom. Sprinkle 1/2 teaspoon Italian seasoning inside each. Set mushrooms in the air fryer basket, cap sides up. Air fry for 3 minutes.
  3. Flip mushrooms over so that the cap is facedown in the basket. Divide pizza sauce between the 2 mushrooms. Cover with 2 tablespoons shredded mozzarella and 1 tablespoon sliced olives. Air fry for 3 minutes.
  4. Place 4 pepperoni slices on each pizza and cover with remaining mozzarella cheese. It is important to weigh the pepperoni down with cheese or the fan will blow them off the pizza.
  5. Air fry until cheese is melted and pepperoni is browned, about 2 minutes.

I tried it and turned out delicious….if using thicker portobello mushrooms, air fry it for 7 minutes.

I was excited to try this recipe as I have been very happy with various new recipes I have tried with my air fryer (Ninja). Made 2 batches following the recipes and instructions exactly (changing the toppings to fresh garlic, basil and tomato). With the air fryer on ‘air crisp’ the ‘pies’ came out al dente… not bad if that’s your preference. Second run I set air fryer on ‘bake’ and cooked for 4 minutes initially and 6 minutes after turning. The outcome was cooked more thoroughly and was much tastier in my opinion. I will certainly make this easy quick recipe again using the modified cooking times/settings.
