Air Fryer Hush Puppies

These air-fried hush puppies are slightly denser than conventional deep-fried fritters, but overall they are lighter as less oil is used in the cooking process. They go well with fried fish or shrimp since they have only a hint of cayenne pepper’s spice. They taste just as nice with a drizzle of honey!

Ingredients

  1. nonfat cooking spray
  2. 1 cup yellow cornmeal
  3. ¾ cup all-purpose flour
  4. 1 ½ teaspoons baking powder
  5. ½ teaspoon salt
  6. ¼ teaspoon cayenne pepper, or more to taste
  7. ¼ teaspoon garlic powder
  8. 2 tablespoons minced onion
  9. 2 tablespoons minced bell pepper
  10. ¾ cup low-fat buttermilk
  11. 1 large egg

Instructions

  1. Preheat an air fryer to 390 degrees F (198 degrees C) according to the manufacturer’s instructions. Line the bottom of the air fryer basket with foil and spray the foil with cooking spray.
  2. Stir cornmeal, flour, baking powder, salt, cayenne, and garlic powder together in a large bowl. Mix in onion and bell pepper.
  3. Whisk buttermilk and egg together in a separate bowl; pour into dry ingredients and stir to combine. Let mixture rest for 5 minutes.
  4. Use a 2-tablespoon scoop to drop portions of batter into the prepared basket; leave space between each scoop. Spray with cooking spray.
  5. Cook in the preheated air fryer until golden brown, crispy, and cooked through, 9 to 10 minutes. Serve hot.
  6. Air fryers heat differently, so check occasionally for doneness. If you need to cook in batches, put all hush puppies back into the fryer at the end, and reheat for 1 to 2 minutes.
  7. I ended up with 12 good-sized hush puppies using the 2-tablespoon scoop. If you make yours smaller, just be sure to adjust the cooking time.

I was excited for this recipe but it was far too dry. I didn’t have trouble with the batter being too thin like another reviewer, I got it to come together and hold shape with no problem, but it was like eating stale bread. Very dry, too crumbly, and seemed like they had been made the day before and left out.

Poor recipe.. Ingredients would not ollow them to stay in ball.
