My preferred method for obtaining chocolate! Cake made in one bowl using readily available ingredients was always gobbled up. really wet.

Ingredients

  1. nonstick cooking spray
  2. 4 large eggs
  3. 3 tablespoons heavy whipping cream
  4. ½ cup coarsely chopped spinach leaves
  5. ½ cup feta cheese
  6. ½ cup cherry tomatoes, halved
  7. ½ cup diced red onion
  8. 1 teaspoon dried oregano
  9. salt and freshly ground black pepper, to taste

Instructions

  1. Preheat an air fryer to 350 degrees F (175 degrees C). Spray a 6-inch cake pan with nonstick spray.
  2. Whisk eggs and cream together in a bowl. Stir in spinach, feta cheese, cherry tomatoes, onion, oregano, salt, and pepper until well combined. Pour into the prepared cake pan and cover tightly with foil.
  3. Air-fry for 12 minutes. Remove foil and air-fry until top starts to brown and a toothpick inserted in the center comes out clean, 4 to 8 minutes longer.

Easy and delicious. I used chard instead of spinach as that is what was in the garden. Also used small ramekins to make individual frittatas that turned out really cute!
