Air Fryer Chicken Taquitos

Even while every cook should know how to make a nice pie crust, there are situations when it is simply not possible. Puff pastry is a straightforward, high-quality substitute for the original, so why leave baking to the grocery shops or bakeries? With ingredients stacked on top, the sheet dough is baked free-form in this Crostada. It couldn’t be simpler!

Ingredients

  1. 1 teaspoon vegetable oil
  2. 2 tablespoons diced onion
  3. 1 clove garlic, minced
  4. 2 tablespoons chopped green chiles (such as Ortega®)
  5. 2 tablespoons Mexican-style hot tomato sauce (such as El Pato®)
  6. 1 cup shredded rotisserie chicken
  7. ½ cup shredded Mexican cheese blend
  8. 2 tablespoons Neufchâtel cheese
  9. salt and ground black pepper to taste
  10. 6 corn tortillas
  11. avocado oil cooking spray

Instructions

  1. Heat oil in a skillet over medium heat. Add onion; cook until soft and translucent, 3 to 5 minutes. Add garlic; cook until fragrant, about 1 minute. Add green chiles and Mexican tomato sauce; stir to combine. Add shredded chicken, Mexican cheese blend, and Neufchâtel cheese. Cook and stir until cheeses have melted and mixture is warmed through, about 3 minutes. Season with salt and pepper.
  2. Heat tortillas in a skillet or directly on the grates of a gas stove until soft and pliable. Place 3 tablespoons of chicken mixture down the center of each tortilla. Fold over and roll into taquitos.
  3. Preheat an air fryer to 400 degrees F (200 degrees C).
  4. Place taquitos in a single layer in the air fryer basket, making sure they are not touching, and mist with avocado oil. Cook until golden brown, 6 to 9 minutes. Turn taquitos over, mist with avocado oil, and air fry until crispy, 3 to 5 minutes.

Used Corn + Flour Tortillas, Used Green Chili sauce mixed with sweet basil tomato sauce and used TexMex cheese blend. Used Oven to cook Chicken Breast. Used Stovetop for blending it together. Used InstantPot Vortex Plus Airfry oven. Baked for 6 minutes without Flipping. Use Avacado Oil, it does make a difference.

These were the HIT at a our Cinco de Mayo themed gathering yesterday. I ran out of green Chiles in another recipe I was making for the same event so used a small jar of salsa verde (green salsa). If I had HAD it, I likely would have used the 4oz can of green Chiles….but I think the salsa verde accomplished a real, similar outcome. Only other changes was using 2oz cream cheese vs Neufchâtel and used Ortega original taco sauce vs hot sauce to accommodate my spice-sensitive guests. In my air fryer; only needed 5 min, flipped the another 3. Everyone raved and devoured as fast as I could pull these out of the air fryer. Great recipe Yoly! Can’t wait to make again when I don’t have to share with so many people!!

Did the first batch on “air fry” setting at 400, 7 minutes. Burnt to a crisp. Second batch I did 375 for 4 min. They were done. No need to flip

Great recipe! A little labor intensive though, considering it’s an air fryer dish. Most of them don’t require a lot of prep but this one does.

I have Ninja air fryer so I ended up decreasing time on second batch because they were too crispy. Good quick recipe but if your used to frying in oil there is difference in taste.

This was the maiden voyage of the air fryer I was given for my birthday—-and what a great first use! The second batch had to be done at 350 degrees since the 400 was a little too high for mine, and I cut the cooking time by a minute or two. These didn’t taste like any taquitos I have ever made or eaten before, but they certainly were tasty!

My boys were surprised at how much they liked these! They couldn’t stop saying how good they were. I had to sub canned tomatoes with green chilies for the green chillies and mexican tomato sauce because that is what I had, and I added 1/2 tsp of cummin to the filling. I will definitely make again! I think I could use this filling recipe for enchiladas or burritos. FYI: this recipe is good for flour tortillas too

Family loved them. I did substitute with turkey meat though, still came out delish. We use the air fryer often so it was a good addition. Id make them again.
