Ingredients
- 1 pound russet potatoes, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon ground black pepper
Instructions
- Place cubed potatoes in a bowl, cover with cold water, and let sit 30 minutes.
- Preheat an air fryer to 400 degrees F (200 degrees C).
- Drain potatoes and pat dry with a paper towel. Add oil, salt, and pepper. Stir until evenly combined.
- Place potatoes in the basket of the air fryer and cook for 20 minutes; shaking halfway through cook time.

This was perfect! I prefer potatoes diced versus hash browns and this went really well. Used some garlic and onion powder along with salt and pepper. They came out wonderfully crispy and soft on the inside. I will definitely make again.
