In place of store-bought marshmallow fluff, use this marshmallow cream. This yields 7 ounces, which are equal to 2 cups.

Ingredients

  1. 1 cup self-rising flour
  2. 2 ½ tablespoons white sugar
  3. ¼ teaspoon ground cinnamon
  4. ⅓ cup milk
  5. 3 tablespoons melted butter
  6. 1 egg
  7. 2 teaspoons vanilla extract
  8. ½ cup blueberries

Instructions

  1. Preheat the air fryer to 340 degrees F (170 degrees C) for 5 minutes.
  2. Combine flour, sugar, and cinnamon in a bowl. Add milk, melted butter, egg, and vanilla extract. Blend until well combined. Fold in blueberries. Add mixture to silicone cupcake liners using a small scoop, filling each 3/4 way full. Place carefully into the air fryer basket.
  3. Air fry muffins for 14 minutes.

Loved the easy recipe, tastes delicious. I followed the advice of other members and baked them for 17 minutes. My air fryer 5.8 quart Go Wise needs 20 minutes at 340 F. I am constantly using all recipes and I ‘ m so glad I finally became a member.

I was craving Blueberry muffins and this hit the spot. I didn’t have the self-rising flour so I added 1 teaspoon baking powder and 1/4 teaspoon salt to the 1 cup of all-purpose flour. I always add a sprinkle of sugar on the top of my muffins it is delicious and extra Blueberries on top to make it more beautiful. It only made 6 muffins for me so I probably made them bigger than they were supposed to be. So next time I plan on doubling the batch.

Texture was fine! Only change I made was a light sprinkle of sugar atop each. I’ll like increase that to 1/4 tsp next preparation. I’ll also add the berries to the dry ingredients to help minimize the juice bleeding. Sure beats having a hot kitchen!

I had to air fry them for 17 minutes instead of 14. After 14, they were still a little doughy in the bottom. I thought they came out very good!
