I could not find ground beef at the grocery store when I went there. The last package of ground bison on the shelf was what I took home. The air fried bison burgers I made for the family were superior to those cooked on the grill. Juicy, flavorful, and with just a trace of grilled flavor added by the liquid smoke. Everyone remarked on the burgers, which came with a slice of Gouda and toppings like lettuce, tomatoes, and pickles. However, only I knew they were made of bison, not cattle.

Ingredients
- 1 pound ground bison
- ½ cup finely chopped onion
- 1 egg, beaten
- 2 tablespoons dry bread crumbs
- 1 tablespoon Worcestershire sauce
- ½ teaspoon liquid smoke, or to taste
- 1 pinch salt and ground black pepper to taste
- 4 hamburger buns
Instructions
- Preheat the air fryer to 380 degrees F (190 degrees C).
- Combine ground bison, onion, egg, bread crumbs, Worcestershire sauce, liquid smoke, salt, and pepper in a bowl. Form into 4 equal-sized patties.
- Carefully place in the bottom of the preheated air fryer and set the timer for 8 minutes. Open air fryer, carefully turn the patties, and continue frying until juices run clear, 4 to 5 minutes more. Place each patty on a bun.

Changes: no liquid smoke, steakhouse seasoning, finely chopped mushrooms, 14 mins total, 390 degrees F. A little dry. I’d cook less next time.
I made these on the thin side. I cooked them 4 minutes on one side and 3 minutes other side. They were cooked through and juicy. This meat has no fat. You can’t cook them for too long or they will dry out.
We cooked 7 min turned and cooked 2 more minutes. The burgers were well done but at least they were not dry. Next time I will cook 3-4 min on each side.
Turned out super well. I made mote than 4 patties because I like the thinner.
