Ingredients

  1. ½ pound bay scallops, rinsed and patted dry
  2. 8 spears asparagus, trimmed and cut into 1-inch pieces
  3. 4 medium mushrooms, sliced
  4. 1 tablespoon olive oil
  5. 1 teaspoon lemon-pepper seasoning
  6. 1 teaspoon parsley flakes
  7. ½ teaspoon ground paprika
  8. 2 wedges lemon

Instructions

  1. Preheat an air fryer to 400 degrees F (200 degrees C).
  2. Add scallops, asparagus, mushrooms, olive oil, lemon-pepper seasoning, parsley, and paprika to a large bowl. Stir until evenly combined. Transfer to the air fryer basket.
  3. Cook in the preheated air fryer for 8 minutes, shaking halfway through the cook time.
  4. Serve with lemon wedges.
