There is more involved in making the ideal affogato than first appears. In actuality, the dessert involves more science than most people are willing to admit. Using gelato intensifies the flavor and adds a velvety, silky smoothness that ice cream simply lacks. This is so that gelato can be served at a different temperature from ice cream and because it has less air and less fat than ice cream. In other words, using ice cream will result in less-than-ideal results because the hot espresso will cause the ice cream to melt more quickly.

Ingredients

  1. 5 ½ ounces vanilla gelato
  2. 2 ounces fresh brewed espresso

Instructions

  1. Place gelato in an old fashioned glass and pour freshly brewed espresso over top. Serve immediately.
