Ingredients

  1. 2 slices whole wheat bread
  2. 2 pounds ground beef
  3. 1 cup medium salsa
  4. 1 green onion, chopped
  5. 2 tablespoons chopped onion
  6. 2 tablespoons whole grain Dijon mustard
  7. 2 tablespoons minced garlic
  8. 1 teaspoon Worcestershire sauce
  9. salt and pepper to taste
  10. 1 tablespoon barbeque sauce

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Grease a 9×5-inch loaf pan.
  2. Soak bread in enough warm water to cover in a small bowl; set aside.
  3. Place beef in a large bowl. Add salsa, green onion, onion, Dijon mustard, garlic, Worcestershire sauce, salt, and pepper to the bowl. Drain bread and add to beef. Mix by hand until well blended. Form into a loaf and place into the prepared loaf pan.
  4. Bake in the preheated oven for 1 hour. Drain off excess fat and top with barbeque sauce. Return to the oven and bake for 15 more minutes.

My husband saw me making this and insisted he wasn’t going to like it. When he smelled it cooking, he agreed to at least give it try. After tasting it, he insists that I make it again but to triple the recipe so he can have plenty of leftovers to take to work! He admitted that it was a lot better than his normal meatloaf recipe we use. (Which is big praise from him!)

I was a little nervous about this dish because it was so different from anything I’d done before. After reading a couple of reviews, I used 1 1/2 cups of Panko breadcrumbs and a green Salsa Verde (It was what I had.) It was ah-mazing! I always hold my breath when I make something new for my Sweet Hubby, (Pureblood Italian with a super chef mama to go with it!). But even he loved it. He refrained, he said, from saying it was better than his mother’s recipe because he values his life. LOL Definitely keeping this one!

Since I always like trying something new and there are so very many meatloaf recipes I rarely do any of them more than once but this is one of the rare exceptions. Absolutely a winner! Only thing I did different was to use bread crumbs instead of bread and I did half ground beef and half ground pork. Loved how moist it was and how the flavors zinged with a bit of a kick. Did half the recipe and just the two of us nearly finished it. Great recipe. Leave it to the Canadians! Merci.

Loved this recipe!! Turned out with a ton of flavor and in my case some heat. I read some of the reviews and decided to go a little old school with using some homemade breadcrumbs and some egg. I didnt soak the bread. I will try that another time. I also ended up using pace picante hot which gave it the kick and I added bellpepper since I love it. Followed recipe otherwise and am eating it right now! Soo Good! Highly recommend recipe.

I made this recipe as is but omitted the green onion. It was exceptional! I made 2 2# loaves thinking 1 would serve 4 adults and the second one would be for leftovers. Glad I did as the men loved it and cut into the extra loaf. I want to try this next with a green chili salsa!

This was great! I made mini meatloaves and they are moist and flavorful! Important change that I will do again and again: when forming mink loaves, I enclosed a generous portion of smoked cheddar inside each loaf. Smoky yumminess was the result! Substitutions: 1/3 c. Dry bread crumbs instead of soaked bread, sweet Baby Rays BBQ sauce instead of ketchup on top, formed into 1/3 c. Mini meatloaves instead of making a whole loaf. Baked for 35 minutes.

I was looking for a different meatloaf receipe. This was a hit! Having been around fireman in my former career I knew how well they cooked.I got an excellent from my husband, he only says that when he means it. I did not have any dijon mustard, so I used spicy brown mustard. It was delicious!

I will make again. I did not have bread, so I substituted 1/2 cup of oats. I listened to the advice of reviewers and added an egg to tie the meatloaf together. It was very good. I appreciate the recipe and the reviewers. Good lookin out!

Made as written, except I only had half the amount of pepper jack cheese, so made up the difference with cheddar. Next time no spur of the moment new recipes I loved it. My own meatloaf is a great recipe, but this was something really good, to change it up once in a while! Hubby said really good, and agreed it was a keeper.

Use crackers. Added dash of milk Italian seasoning, garlic powder, onion flakes, Joe Beef Spice. Doubled up amounts and made an additional 23 small meatballs, 12 large meatballs and the single meatloaf as per recipe

Holy cow! This was amazing! Even using gluten free bread, it was still fantastic. And that’s saying soEven my picky ones gobbled it up! I’ve used both fresh salsa and jarred, both were awesome but we prefer the fresh.

Very nice recipe. I wouldn’t soak the bread again it made the meatloaf too moist so it fell apart. The flavor was really good. I added honey mustard because I didn’t have dijon. I also used Jack Daniels barbeque sauce.
