When combined with a chicken panini, a BLT can become a gourmet sandwich. Use the standard BLT ingredients, including crusty bread and thinly sliced roasted chicken from the deli. This quick and simple sandwich will please the entire family.

Ingredients

  1. 1 teaspoon olive oil
  2. 1 small onion, diced
  3. 1 (28 ounce) can diced tomatoes
  4. 2 (15 ounce) cans black beans, drained
  5. 1 tablespoon chili powder, or to taste

Instructions

  1. Heat olive oil in a large saucepan over medium heat. Add onions and saute until transparent, 5 to 7 minutes.
  2. Add tomatoes, beans, and chili powder; bring to a simmer. Cook, stirring occasionally, for 20 minutes or longer.
  3. Use any type of beans (black, kidney, pinto, or whatever you like) but for best results use 2 different types.
  4. This chili gets better the longer it cooks.
