Ingredients
- 1 large ripe banana
- 2 eggs
- ⅛ teaspoon baking powder
- 1 pinch ground cinnamon (Optional)
- 2 teaspoons butter, or as needed
Instructions
- Mash banana in a bowl using a fork; add eggs, baking powder, and cinnamon and mix batter well.
- Heat butter in a skillet over medium heat. Spoon batter into the hot butter and cook until bubbles form and the edges are dry, 2 to 3 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

Definitely an omelette with banana….. but surprisingly not terrible. Just mushy.
Good flavor. Added 1/4 cup of almond flour (any flour should do) based on the texture and reviews that it was too thin, and it worked perfectly. Also cooked on medium high heat otherwise it takes forever to set.
Another poster echoed my thoughts…an omelet with bananas. Shouldn’t really be called pancakes. I had three bites and they went in the trash. Not good at all in my opinion. If you want low carb, just have the eggs. Waste of two good eggs. Just make an omelet instead.
Just made these for the first time and they weren’t bad, just a bit different that I was expecting. Spoiled by the cottage cheese pancakes on https://hurrythefoodup.com/cottage-cheese-pancakes/ which are so yummy more pancake textured that these turned out. Will make again but maybe tweak to get less of a liquid consistency.
The only change from this recipe I made was using some pancake mix rather than baking powder and a little vanilla. It was all right. Easy to make. Although I had to be careful not to fry too long. Overall a three was the best rating I could give. Might make it again, but not sure.

This was amazing! The comments saying that this has a little more of an eggy texture were correct, though that doesn’t at all bother me. It’s more like an omelet texture than it is like scrambled eggs. This is a super delicious way to have a super healthy breakfast – it’s just two eggs and fruit in disguise. As someone who’s making active efforts to be healthy, I’m ecstatic about the fact that I can have 5 pancakes for the caloric price of 2.

Guilt free pancakes! Sounds like a weird recipe, but is very yummy! I don’t use the leavening though, just the eggs, banana, and cinnamon.
I added an extra banana as my I had 1 large egg. I really really enjoyed this I will make it again. Sadly my gas ram out half way through cooking the batter.
I recommend doing it in an air fryer so that the breading doesn’t get soggy, but it is delicious!
I made a large batch with 5 bananas and 6 eggs, and the pancakes were watery and a bit flavourless at first. I added some salt and flour to the mix and voila! Made the texture way better, and held the batter together so they didn’t just fall apart on your fork. With less eggs and the added ingredients, these turned out pretty fluffy and good. You just have to play around with the mixture a bit, every batch is different
No changes, ok but not a wow reaction. May make them again but just not pancakes as I know them.
I never post if it’s not that good but this was awful. I followed the recipe exactly and they came out looking like scrambled eggs. They tasted like scrambled eggs with a hint of banana. Threw it all away
Tastes great!!! I love the flavor, but I do not like the consistency. I thought I could make pancakes with it, but it was such a hassle flipping the batter in my pan. I attempted to make the batter into pancakes multiple times with no avail. I love how it tastes though 🙂
I will never eat regular pancakes again! These were amazing! Only a slight taste of banana bread… Were not heavy on my stomach and didn’t make me feel tired after eating. You can add anything to these. I’ve added blueberries, different nuts, chia seeds, strawberries, the list goes on! I’ve made them numerous times now and absolutely love them!
