Ingredients
- 3 1/2 pounds hamburger
- 2 eggs
- 1 cup oatmeal
- 1 small onion, diced
- 1 small green pepper, diced
- 1/2 cup ketchup
- 1 1/2 cups beef broth
- 1 tablespoon salt
- 1 tablespoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
Instructions
- Preheat the oven to 350 degrees F.
- Mix all ingredients well. Place in a loaf pan and bake for 1 1/2 hours.

I had never substituted oatmeal for breadcrumbs before and I was a little bit worried about how that might change the taste. The oatmeal actually improved the texture and taste of the meatloaf. The whole family enjoyed this new, healthier version of meatloaf a lot!

I’ve been serving this to my family of seven for several years. I cook it in my smoker and have learned to cook at the high temperature (for a low and slow smoker) of 250 degrees. At lower temps the onions and peppers are crunchy. The meatloaf is a favorite.

I tried this recipe out ‘with a bit of a twist’ and was told by my fiance’ that it was the BEST meatloaf he had honestly had. It turned out moist and flavorful indeed! My ‘twist’..? In addition to cutting portion in half again to 2/4 servings, I substituted the oatmeal with my own garlic flavored croutons and added combo ketchup/bbq sauce in the mixture as well as glazed the top for last 10/15 min. YUM!
I’ve made this meatloaf several times … there is one baking in the oven right now. It is easy and love the fact that I always have all the ingredients at home. It is moist and flavorful.
My husband is a fan of meatloaf, but at the sametime extremely picky about meatloaf. I made this recipe for my family of 4. We all loved it and the leftovers (which never get requested) were a bigger hit. I look forward to making this for our whole family. Enjoy
It was a very tasteful and pleasing meat loaf. You can addlittle less salt for health reasons. Also if you make a sauce for the top do add to much ketchup which can make the meat loaf more salty. My first making this meat loaf, but it was one hit wonder with my family.
