Ingredients
- 3 pounds turnips, peeled, cut into 1-inch wedges
- 8 to 10 unpeeled cloves garlic
- 10 sprigs fresh thyme
- 6 tablespoons unsalted butter, melted
- Kosher salt and ground black pepper
Instructions
- Preheat the oven to 400 degrees F.
- Place the turnips on a baking sheet. Scatter the garlic and thyme over the top. Drizzle with the butter and sprinkle with salt and pepper. Toss to combine.
- Roast until the turnips are tender and golden, about 30 minutes.

This reminds me of the first time I ever had turnips. It was a good thing I was at a friend of my parents house or I probably would have turned my nose up at and not even tasted them. Our friends were having a BBQ and they prepared all of the vegetables this way, wrapped them in heavy duty foil and then buried the foil packs in the coals. I had been thinking about them for quite a while. I got some with my groceries and then searched the app for a recipe. When I saw this one, I had to try it. They tasted exactly like I remembered. We had these for Sundai Supper last night and loved them, the only change I will make next time is to take the garlic out of its jackets for more garlic flavor and for sake of ease because we love to eat it and it was a little awkward peeling it at the table. I’m looking forward to the leftovers tonight!
Just made this recipe, I must say the flavor is incredible! I did add shallots to the mix and a herb basting oil plus olive oil. This has made it to the list of family favorites of side dishes.. Yummers!
