Turkey Meatloaves with Braised Cabbage

Ingredients

  1. 4 cloves garlic
  2. 4 slices bacon, roughly chopped
  3. 1 onion, roughly chopped
  4. 2 slices white sandwich bread, torn into pieces
  5. 1/2 cup grated parmesan cheese (about 1 ounce)
  6. 1 large egg
  7. 1 1/4 pounds extra-lean ground turkey
  8. 1/2 head green cabbage, cored and sliced 1/2 inch thick
  9. 1 14.5-ounce can no-salt-added diced tomatoes
  10. 2 cups low-sodium chicken broth
  11. 2 tablespoons Worcestershire sauce
  12. 2 tablespoons chopped fresh parsley

Instructions

  1. Pulse the garlic, three-quarters of the bacon and half of the onion in a food processor until finely chopped. Add the bread, cheese and egg; pulse to make a smooth paste. Transfer to a large bowl; add the turkey and mix with your hands. Form into four 1-inch-thick oval patties.
  2. Cook the remaining bacon in a large nonstick skillet over medium heat until browned, 4 minutes. Increase the heat to high and add the patties. Cover and cook until golden brown, 4 minutes; flip and cook, uncovered, 3 to 4 more minutes. Transfer the patties to a plate.
  3. Add the cabbage and the remaining onion to the skillet; cook, stirring occasionally, until the cabbage wilts, 4 minutes. Reduce the heat to medium high and add the tomatoes, chicken broth and Worcestershire sauce. Cover and bring to a boil, then uncover and cook until slightly reduced, 4 minutes. Return the patties to the skillet and simmer until cooked through, 10 minutes. Top with the parsley.

These were just NOT good. I should have known better when it called for putting RAW onion and uncooked bacon in the meatloaf mix. We could barely eat it and I  needed to do some serious rehab on it to make the leftovers edible.  It tasted for raw onion, which is not pleasant.

Why is the sodium so high. This sounds great and I would like to make it, but, the sodium is almost my whole days allowance.

I loved this recipe and so did my husband. I made a few minor changes. Used a bag of multi-colored coleslaw instead of cabbage. Used precooked bacon, the kind you just microwave, so I did not have any bacon fat left in the pan to saute the onion and cabbage. Used olive oil instead. Otherwise, followed the recipe exactly. It was great. Will definitely make again.

This was FANTASTIC! Super hearty and filling and all for under 500 calories. I agree that it might be nice to do more falafel sized mini loaves (then there’s more outer crust). I did do 2 strips of bacon to put in with the cabbage–I wanted to use the whole head of cabbage, rather than a half. I used the diet wheat bread that is 45 calories per slice to save even more calories.

The mixture was very wet and completely fell apart in the pan. Dividing the mixture into eight mini loaves would have helped. I wish the ingredient list was more specific. I must have had an overly large onion because all I tasted was onion and nothing else in the turkey. I won’t be making this again.
