Ingredients
- 1 tablespoon vegetable oil
- 2 carrots, peeled and chopped
- 1 celery stalk, chopped
- 1 medium onion, chopped
- Salt and freshly ground black pepper
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 teaspoons Worcestershire sauce
- 2 pounds ground turkey (1 pound lean breast meat and 1 pound thigh meat)

- 1/2 cup grated hard cheese, such as Parmesan-Gouda blend
- 1/3 cup plain breadcrumbs
- 1 tablespoon chopped fresh thyme
- 2 teaspoons chopped fresh sage
- 1 teaspoon chopped fresh rosemary
- 1 large egg
- Nonstick cooking spray, for spraying pan
- Fig Catsup, recipe follows
- 1 pound fresh figs, quartered
- 8 ounces Roma tomatoes, quartered lengthwise
- 1 cup apple cider vinegar
- 1/3 cup sugar
- 1/4 cup sorghum syrup
- 1 teaspoon Thai-style chili paste
- 1 teaspoon coriander
- 1 teaspoon cumin
- 1/4 teaspoon cinnamon
- 1 fresh bay leaf
- Salt
Instructions
- Preheat the oven to 350 degrees F.
- Heat the vegetable oil in a large pan over medium-high heat. Add the carrots, celery, onions and some salt and pepper and saute until just starting to soften, about 3 minutes. Add the garlic, stir to combine and saute until fragrant and softened, about 1 minute. Add the tomato paste and Worcestershire sauce and cook for 1 minute. Remove from the heat and set aside.
- In a large bowl, combine the turkey, cheese, breadcrumbs, thyme, sage, rosemary, egg, salt, 2 teaspoons black pepper and the cooked veggie mixture and mix with your hands.
- Spray a standard 9-inch loaf pan with nonstick spray and fill with the mixture. Bake for 35 minutes. Remove the pan and spread 1 cup of the Fig Catsup over the top of the meatloaf. Bake until slightly firm and the turkey is cooked through, 15 to 20 more minutes.
- Serve with Fig Catsup on the side.
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- Place the figs and tomatoes skin-side down on the prepared baking sheet. Roast until they start to brown and soften, about 40 minutes. Cool, and then remove the tomato skins.
- In a food processor, combine the figs, tomatoes, vinegar, sugar, sorghum, chili paste, coriander, cumin and cinnamon and pulse until combined.
- Put this mixture in a saucepan with the bay leaf and cook over medium-high heat until the mixture begins to boil. Reduce the heat and simmer, stirring often, until it thickens and reduces by a third, about 30 minutes–it will be thick enough so that when you stir it, you’ll be able to see the bottom of the pot. Remove the bay leaf and discard. Season with salt.

My Mom does not like meatloaf, my step-dad does not like turkey, they both loved this recipe and asked me to come over and make it again!
It was good (not excellent) but not worth the effort. A lot of steps, a lot of time, for only a pretty good end result. Yes, the meat loaf was moist, yes the fig catsup was a nice change from traditional ketchup, but after all the effort it didn’t ‘wow’ me.

were balanced and on the mild side. The loaf was moist and it’s texture was perfect. Even though I am not a big fan of turkey, I will be making this again for a lower fat version of one of my favorite foods. Thanks for he instruction on sautéing the veggies before adding to the meatloaf.

This meatloaf is delicious. The turkey was moist and flavorful and the fig catsup was amazing! I will definitely be making this one again!
This was incredible. We did have to use molasses in place of sorghum but the fig catsup was truly amazing and made this one of the most unique, moist, and delicious meatloaves I’ve ever had.
We made this last night and it was delicious! I deviated from the recipe a bit as I couldn’t find ground turkey thigh meat (so I just used 2 lb of ground turkey breast). I had a pound of figs but just used about 3/4 of them in the sauce as I was concerned about it being too sweet for our taste along with the sugar and I substituted sorghum syrup with molasses. I used the rest of the tomato paste leftover from the small can I bought in the catsup and added more salt and pepper (along with a dab of sriracha because my husband and I like the heat). All in all, something I will definitely make again!
My husband made this for us even though I don’t generally like meatloaf, but this definitely won me over! We love Damaris and her show. Keep up the great work!

My daughter and I watched the show yesterday and since I was heading to the grocery store after I got the ingredients to make this and the potatoes from the show. I would have made the greens as well but couldn’t find miso. I ended up having to use some sun dried figs since they aren’t in season at the moment here. My daughter and son-in-law have a fig tree so I know we’ll be making this again next year when the tree produces more fruit. We really enjoyed the meal and love your new show. I’m planning on making the roasted veggie pot pies next weekend.
Hi! Love the new show girl! And love this recipe! I made it for dinner tonight after watching today’s new show! Exceptional! My only advise? Make the catsup well in advance of the meatloaf. Otherwise, you’ll have an issue with time management of the meatloaf and topping of the catsup etc. I LOVE the catsup in the final stage. I added a cinnamon stick in the simmering process. Magic. Love you tons and I know you will be so successful on the network!
