Ingredients
- 1 tablespoon mayonnaise
- 4 slices bread, toasted
- 2 thick slices Turkey Meatloaf, recipe follows
- 2 slices ripe large tomato, such as beefsteak
- 2 tablespoons Gwen’s Cole Slaw, recipe follows
- 1 tablespoon mustard
- 1 lettuce leaf
- 2 tablespoons olive oil
- 2 small onions, 1 finely chopped and 1 cut into half-moon slices
- 3 tablespoons fresh parsley, chopped
- 1 1/2 pounds dark meat ground turkey
- 3/4 cup plus 3 tablespoons seasoned breadcrumbs
- 1 large egg
- 1/4 cup plus 3 tablespoons ketchup
- 1 teaspoon kosher salt, plus more for sprinkling
- 1 teaspoon freshly ground black pepper, plus more for sprinkling
- 1/4 small head cabbage, cored and thinly sliced (2 cups)
- 1/4 small onion, diced
- 1/4 cup mayonnaise
- 1/4 cup sweet relish
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon Dijon-mayonnaise spread, such as Dijonnaise
- Kosher salt and freshly ground black pepper
Instructions
- For Hers: To make the sandwich, spread the mayonnaise on 2 slices of bread. Top 1 slice of bread with 1 slice of meatloaf, 1 slice of tomato and the cole slaw. Top with the other slice of bread.
- For His: To make the sandwich, spread the mustard on the remaining 2 slices of bread. Top 1 slice with the remaining slice of meatloaf, tomato and the lettuce. Top with the other slice of bread.
- Preheat the oven to 350 degrees F.
- Heat 1 tablespoon oil in a small skillet over medium-low heat until hot but not smoking. Add the chopped onion and saute until softened and brown, about 6 minutes. Add the parsley and cook for another minute. Set aside.
- In a large mixing bowl, combine the turkey with the breadcrumbs, egg, 1/4 cup of the ketchup, cooked onion mixture, salt and pepper. Mix until fully combined. Form into a loaf and transfer to a 9-by-5-inch loaf pan. Using a pastry brush or the back of a spoon, brush the remaining 3 tablespoons of ketchup over the loaf.
- Evenly scatter the sliced onions over the loaf, drizzle with the remaining tablespoon of oil and sprinkle with salt and pepper. Bake until the meatloaf is cooked through, 55 to 60 minutes. Yield: 4 to 6 servings
- In a large bowl, combine the cabbage, onion, mayonnaise, relish, lemon juice, Dijon-mayonnaise spread and salt and pepper to taste. Chill for at least 30 minutes and up to overnight before serving.

Meatloaf is dry and I agree with other reviewer that the meatloaf itself wasn’t very good. This is what makes the sandwich. Really wasn’t anything that outstanding here. The cole slaw is just okay
Wonderful meatloaf
sorry trisha, but this was more like a “breadcrumb ketchup loaf”. very mushy and tasted…well…like ketchup! however i will use the step of cooking onions, parsley and oil together over and over for other recipes.
Easy and very good!!
Easy and delicious! I served as a meatloaf entree, not sandwiches. I had the flavored Heinz ketchup – balsamic vinegar flavor – and used that, which gave it a nice, rich flavor. Love the onions on top. Will reduce amount of bread next time – some bites were all gummy bread.
.Give up. 4th time trying to post and the website bounces everywhere so my review is mangled. Just say I enjoyed but wish we could be advised where specialty items are purchased. In this case, the sandwich containers with built in cutlery.
Trisha’s meatloaf was the best meatloaf I ever had! The seasonings all melded together beautifully. Having the onions and parsley cooked together than mixed in with the raw meat added another layer of delicious flavor. I never would have thought to add ketchup to the mixture, but it works! The onion topping was a nice surprise. This dish is a must and will now be the new way I make meatloaf.
