Turkey Gravy

Ingredients

  1. 2 cups pan juices from the turkey roasting pan
  2. 4 tablespoons fat skimmed from the pan juices
  3. 4 tablespoons all-purpose flour
  4. 1/4 cup shredded white meat from your roast turkey
  5. 2 large eggs, hardboiled, peeled and chopped fine
  6. Salt

Instructions

  1. Pour the pan juices from your turkey roasting pan into a measuring cup. Skim and reserve the fat; you’ll need 4 tablespoons total. If the remaining turkey juice comes to less than 2 cups, top off with chicken stock.
  2. Mix the flour with the skimmed fat in a medium saucepan. Cook over medium heat until the roux is lightly browned, about 3 minutes. Slowly whisk the pan juices into the roux and cook until the gravy thickens. Stir in the shredded turkey meat and chopped eggs. Add salt to taste.

First of all, I’ve been making Trisha’s recipe for a couple of years. It’s that simple but anything takes practice especially gravy. Last year was close and through the year I tried it, and in 2019 BAM! I tripled the batch and also it turned out perfect! Thanks so much!

Thank you for posting this Trisha. My grandma always made the gravy this way except she used the turkey neck and gizzard instead of the white meat. My family loves this with the boiled eggs. If people don’t like boiled eggs in it, just leave it out. I do think boiled eggs help give it some body and taste delicious. This brings back so many memories since she just turned 90 and now I’m making it when she visits for the holidays.

I personally hate eggs like that. so that is the only part i would leave out. but it works perfectly with out it so great recipe.

As a Chef of 20 years I can say this is the most absurd gravy recipe I have ever seen. If I asked one of my cooks to make turkey gravy and he came back with some gross mess with shredded meat and eggs in it I would fire him.

Maybe its a regional cuisine, but obviously not a region anyone should eat in.

Trisha: When you fixed the gravy with hard boiled eggs – I cried because my mother-in-law put eggs in her gravy. She passed away on 12-19-10. I told my husband about you making gravy with the eggs he started getting teary eyed. Southerners even put hard boiled eggs in their tuna fish (gag) but, try the gravy without the eggs, it’s amazing!!
