Ingredients
- 1 English cucumber, diced
- 1/2 cup crumbled feta cheese
- 2 tablespoons red wine vinegar
- 1 teaspoon dried mint
- 4 tablespoons extra-virgin olive oil
- Kosher salt and freshly ground pepper
- 1 1/2 pounds ground turkey
- 1 cup hummus, preferably spicy or roasted red pepper (about a 7-ounce container)
- 1/2 cup chopped fresh parsley
- 2 teaspoons ground coriander
- 16 mini pita pockets, preferably whole wheat, split open and warmed
- 2 to 3 plum tomatoes, sliced
Instructions
- Toss the cucumber, feta, vinegar, mint, 1 tablespoon olive oil and a pinch each of salt and pepper in a bowl; cover and refrigerate.
- Mix the turkey, 1/2 cup hummus, the parsley and coriander in a bowl; season generously with pepper. Dampen your hands and shape the mixture into 16 small patties, about 1/2 inch thick.
- Heat 1 1/2 tablespoons olive oil in a medium cast-iron skillet over medium-high heat. Add half of the patties and cook until browned and cooked through, about 2 minutes per side. Transfer to a plate. Cook the remaining patties in the remaining 1 1/2 tablespoons olive oil.
- Mix the remaining 1/2 cup hummus with a splash of hot water in a bowl. Spread some of the hummus on the inside of each pita; fill with a tomato slice, turkey patty and some of the cucumber mixture.

We LOVED these! Great flavor while eating healthy! We will be adding these to our normal rotation! I could just eat the cucumber and feta as a side dish and the burgers were so flavorful with the hummus. YUM!
We really enjoyed these little burgers. I added just a little dry falafel mix in because I was worried about the other reviews that said they fell apart, but don’t think that was necessary. Be sure to be liberal with the s&p in the burgers, I thought mine needed just a little something. I broiled the burgers because I couldn’t bear the thought of that lean turkey in the oil, and reduced the oil in the cuke mix in half. The extra fat certainly wasn’t missed. I used the red pepper hummus, and instead of using water to thin it to spread, I used a squeeze of fresh lemon and a couple of good squirts of sriracha. “Someone” ate the tomatoes, so I used jarred roasted red peppers, and would definitely do that again! Will double the cucumber next time mix as we all ate it on the burgers and as a side dish as well. Will prob add a little minced garlic to the burgers next time too.
I’m making these for dinner tonite. My son had a choice between stuffed peppers and these, and he immediately chose these. I will leave out the mint. While it may sound good to others, IMO mint is for toothpaste! I think the rest of the flavors will more than make up for the mint. Thanks for this recipe.
Delicious for the Greek lovers! I made this for dinner one night and for my fiancé that is not a big feta fan, licked every crumb. I will keep this for years to come for a fast and easy dinner!
I don’t like turkey so I used chicken. The chicken mix was very moist so I dropped spoonfuls on to the pan and flattened them with a spatula. They came out delicious!
The meat is tasty , the feta and cucumber mix adds a delicious cool taste. Be sure to use the spicy hummus on the pita because it does add a “kick” to the flavor.
They were so good !!! Can’t wait to make them again!
My only complaint is that the burgers fell apart. I’m gonna try again & even if they fall apart again, they are still yummy.
okay I’m not perfect and probably did something horidly wrong, but these turned out far too moist (i packed the patties pretty well but they were so liquidy that they all fell apart The flavor is fine but I ended up with sloppy lose meat sandwiches.
I was disappointed.
