Tex-Mex Turkey Burgers with Avocado Mayonnaise

Ingredients

  1. 1 1/4 pounds lean ground turkey
  2. 2 cloves garlic, grated
  3. 2 teaspoons hot smoked paprika
  4. Kosher salt and freshly ground pepper
  5. 1 avocado, halved
  6. 3 tablespoons mayonnaise
  7. Juice of 1 lime
  8. 1 tablespoon vegetable oil
  9. 4 slices pepper jack cheese (about 3 ounces)
  10. 4 sesame potato buns
  11. Shredded lettuce and tortilla chips, for topping

Instructions

  1. Combine the turkey, garlic, paprika, 3/4 teaspoon salt and a few grinds of pepper in a medium bowl; mix with your hands until just combined. Form into four 1/2-inch-thick patties; set aside.
  2. Combine 1/2 avocado, the mayonnaise, lime juice and 1/4 teaspoon salt in a medium bowl; mash until smooth. Thinly slice the remaining 1/2 avocado and season with salt and pepper. Set aside for topping.
  3. Heat the vegetable oil in a large nonstick skillet over medium-high heat (or preheat a grill to medium high and oil the grates). Add the burgers and cook until browned, 3 to 4 minutes per side. Top each burger with a slice of cheese; cover and cook until the cheese melts, about 30 seconds.
  4. Meanwhile, split and toast the buns; spread the avocado mayonnaise on the cut sides. Serve the burgers on the buns with lettuce, the sliced avocado and tortilla chips.

Giving it four stars for a good basic recipe, however…I thought it needed a bit more flavor…added cumin and chopped shallot. Also, the avocado sauce is basically guacamole with some mayonnaise blended in; could just use guacamole.

I usually don’t like ground turkey but I love this turkey burger. It was very flavorful & easy to make. Will add this to my family’s meal rotation. Avocado mayo is super yummy!

This was fabulous. The spices made the difference. I used cheddar jack and pepper jack. The avocado mayo was easy to make and added a nice flavor. We served with tortilla chips, avocado, and purple onion. Great recipe!

I’ve made these three or four times since they came out in Food Network magazine.  Really simple to make and yet very flavorful.  Tonight, I substituted cumin for the paprika and they were also a hit.  Sometimes, I think there’s at least as much impact, or even more from a recipe with just a few ingredients, rather than a laundry list of obscure ingredients and this one is an example of that.  A great meal to make when you don’t have much time or energy, but still want something good.

Yum!  I used gouda instead of pepper jack because gouda is awesome.  It was delicious and I’ll make it again for sure.
