Waffle Iron Grilled Cheese Sandwiches

I fired up my panini machine one evening to prepare a grilled cheese sandwich only to discover that I would left the waffle plates inside. This was more of a process than a recipe. I used the plates as is rather than switching them out, and I was quite happy with the result. Although the sandwich becomes quite crispy, the cheese inside the tiny squares remains soft and gooey. Now, I always make grilled cheese using this technique. Serve alongside hot pickled vegetables!

Ingredients

  1. 2 tablespoons mayonnaise
  2. 2 teaspoons Dijon mustard
  3. 4 slices whole-grain bread
  4. 2 ounces shredded pepperjack cheese

Instructions

  1. Preheat a waffle iron according to manufacturer’s instructions.
  2. Mix mayonnaise and Dijon mustard together in a bowl; spread onto 1 side of each bread slice. Sprinkle pepperjack cheese over mayo-mustard layer of 2 bread slices. Cover cheese layer with a second bread slice, creating 2 whole sandwiches.
  3. Place 1 sandwich in the waffle iron, taking care not to push down all the way. Wait until the bread begins to soften from the heat before starting to gently close the waffle iron, about 2 minutes. Apply more pressure to the top part of the iron, eventually closing it after a total of 3 to 4 minutes. Cook until browned, 2 to 3 minutes more. Repeat with the remaining sandwich.
  4. I use gluten-free bread.
  5. Use primo sale cheese in place of the pepperjack, if desired.

Grilled cheese is classic but as an adult I like it with a twist. The mayo and mustard combination + the pepper jack is exactly what I was looking for! The waffle iron made it fun for my daughter!
