Ingredients
- 1 (40 ounce) can Bruce’s Yams Cut Sweet Potatoes in Syrup, drained
- 1 (16 ounce) can sliced peaches (no sugar added), drained, juice reserved
- ½ teaspoon ground ginger
- ½ teaspoon salt
- ½ teaspoon pepper
- ⅓ cup chopped pecans
- ¼ cup brown sugar
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Place sweet potatoes into a large bowl and cut into slightly smaller pieces. Reserve 4 to 5 peach slices for garnish; add remaining peach slices to potatoes in the bowl. Add 1/2 cup reserved peach juice, ginger, salt, and pepper; mix until well combined. Transfer mixture to a 2-quart baking dish.
- In a small bowl, stir together pecans and brown sugar. Sprinkle over the top of casserole and arrange reserved peach slices in a line down the center.
- Bake in the preheated oven until casserole is hot and bubbly, 35 to 40 minutes
- You can add 2 tablespoons minced candied (crystallized) ginger to the brown sugar-pecan mixture if desired.

This is soooo good and very easy too! I did not add pepper, based on the recommendation of another reviewer. I had fresh juicy Georgia peaches on hand, so I used two peaches and held them over the bowl while I peeled and sliced them so the juice would run into the bowl. I did not add any liquid besides that, and the dish was plenty moist. I did what someone else recommended and just mixed all the ingredients together. While mixing, the sweet potatoes pretty much fell apart almost like they were mashed, and the consistency was very nice. Will definitely make this recipe again!
This was easy and inexpensive to make but the addition of pepper practically ruined it. I should have trusted my instincts and left it out. I will make this again without the pepper.

This was good. It has a nice fresh taste. The problem was I made it for Thanksgiving and it missed the mark on the home/comfort style food that was all around. Maybe on Christmas next year.

I liked this recipe very much, a nice change from regular candied sweet potatoes. I used fresh sweet potatoes (in place of canned) and walnuts in place of pecans.
Very good. Husband loved it. I only used 1/4 cup of peach juice as that was what I drained from the peaches. There was more than enough moisture. Also, rather than mix brown sugar and pecans and sprinkle over top, I mixed in with yams and peaches. Therefore there was no need to garnish top with peaches. Peaches were visible all over.
