Sweet Potato Noodle Pudding (Kugel)

Jewish folks refer to it as “Kugel,” and it is a delectable and incredibly simple dish that is served with every holiday dinner.

Ingredients

  1. 1 (16 ounce) package wide egg noodles
  2. 3 tablespoons butter (plus extra to grease dish)
  3. 5 large eggs, beaten
  4. ½ cup heavy cream
  5. ¼ cup sugar
  6. 1 teaspoon salt
  7. 1 ½ cups sour cream
  8. 1 (15.5 ounce) can crushed pineapple, undrained
  9. 1 (40 ounce) can Bruce’s® Yams Cut Sweet Potatoes in Syrup, drained
  10. Pumpkin pie spice for sprinkling over pudding

Instructions

  1. Heat oven to 350 degrees F.
  2. Butter a large 13×10-inch (4 quart) baking dish; set aside.
  3. Cook noodles according to package directions. Drain and return to saucepan along with butter; mix well to coat the noodles.
  4. In a medium bowl, stir together the eggs, cream, sugar, salt, sour cream and pineapple.
  5. Cut the sweet potatoes into small chunks then add to the egg mixture.
  6. Stir sweet potatoes into the noodle mixture, mix well then transfer to the prepared baking dish. Sprinkle with pumpkin pie spice.
  7. Bake for 40-45 minutes until the top is golden brown and the pudding is set.
  8. Allow pudding to cool for at least 40 minutes before cutting into squares.
  9. This side dish can be served warm or, even better, at room temperature.

We love Kugel at our house, but I’d never before seen a recipe for Sweet Potato Kugel…this was a real treat for us. It was fun to make and turned out perfectly. We loved it! I will definitely make this one again!!!

Entertained 10people at my house and they all loved this chicken. I made the chicken rolls the night before and baked them according to the recipe however I did broil then to get that crispy taste to the bacon. I definitely will make this again.
