Strawberry Lime Smoothie Pops

When I visited Taiwan, I regularly drank black sugar bubble tea, so I made the decision to pack some tapioca pearls (boba) to create my own at home. This recipe is flexible because you may adjust the amount of milk and tea and the sweetness to your liking. Brew tea to your favorite strength, but since you’ll be adding milk and ice to dilute it, it’s best to use a strong tea. To sip the boba, you’ll need a broad straw, or you can fish them out with a long spoon.

Yield: 6 to 8 – ice pops

Ingredients

  1. 1 cup Almond Breeze Vanilla almondmilk
  2. 1 cup frozen strawberries
  3. ½ cup vanilla Greek yogurt
  4. 1 tablespoon honey or maple syrup
  5. 1 medium banana
  6. ½ lime, juiced

Instructions

  1. Blend all ingredients, then pour into ice pop molds.
  2. Freeze for at least 2 hours (or overnight).
  3. You can substitute non-dairy yogurt for the vanilla Greek yogurt.

I drank what didn’t go in the molds, and it was very tasty! I had to tinker bc I didn’t have exactly everything–added a teaspoon of vanilla (could possibly have done more) bc I had plain almond milk AND plain yogurt. Added a TB of lime juice bc my limes, it turned out, were all dried out. Made six popsicles and maybe 4 ozs of “smoothie.”

The recipe makes more than 6 servings. I froze the remainder in a rectangle shaped storage container. very tasty and easy recipe.

If I were to add a little rum to this, would it work ( as liquor doesn’t freeze very well) if so any suggestions on how much?

These were good, yet pretty mild in flavor. They were more “icy” than creamy in consistency, so I may add some cream for a portion of the almond milk next time. I substituted agave syrup for the honey. Also, the mixture filled 8 of the popsicle molds I bought at Walmart, with a little left over.
