Savory Balsamic Chicken

What we adore most about our savory balsamic chicken recipe is difficult for us to pinpoint. It is simple to prepare, ready in under 30 minutes, and incredibly tasty. For a simple weekday dinner, serve with steaming green beans and crusty French bread.

Ingredients

  1. 4 medium boneless, skinless chicken breasts (1 1/4 pounds), trimmed
  2. Salt and ground black pepper to taste (Optional)
  3. 1 tablespoon Country Crock® Spread
  4. 2 cups sliced mushrooms
  5. ¼ cup onion, chopped
  6. 3 tablespoons balsamic vinegar
  7. ⅓ cup chicken broth
  8. 1 teaspoon Dijon mustard

Instructions

  1. Season chicken, if desired, with salt and black pepper.
  2. Melt Country Crock® Spread in large nonstick skillet over medium-high heat and brown chicken, turning once, about 6 minutes. Remove chicken and set aside.
  3. Cook mushrooms and onion in same skillet over medium heat, stirring occasionally, until tender, about 3 minutes. Add vinegar and simmer 1 minute. Stir in broth and mustard and simmer, stirring occasionally, 4 minutes, or until sauce is slightly thickened.
  4. Return chicken to skillet and simmer uncovered 5 minutes or until chicken is thoroughly cooked. Serve, if desired, with warm crusty French bread.
