Salted Caramel Apple Bars

This tasty snack bar with caramel apples and a dash of salt is perfect for a coffee break treat.

Ingredients

  1. 2 cups all-purpose flour
  2. ⅔ cup confectioners’ sugar
  3. ¼ teaspoon baking powder
  4. ¼ teaspoon salt
  5. ½ teaspoon ground cinnamon
  6. 1 pinch nutmeg
  7. ½ cup butter, softened
  8. 1 egg
  9. 1 cup Mott’s® Original or Cinnamon Applesauce
  10. 1 teaspoon vanilla extract
  11. ½ cup chopped dried apples
  12. 1 cup caramel bits*
  13. 1 cup chopped walnuts
  14. ¼ cup granulated sugar
  15. ½ teaspoon ground cinnamon
  16. ⅛ teaspoon coarse sea salt, or to taste**

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease 9-inch square pan.
  2. Combine flour, confectioners’ sugar, baking powder, salt, cinnamon and nutmeg in a bowl.
  3. Cream butter in separate large bowl. Beat in egg, applesauce, and vanilla extract.
  4. Mix dry ingredients into wet ingredients. Stir to combine. Add diced apples, caramel bits and walnuts; blend in thoroughly. Pour into greased pan and distribute evenly.
  5. Combine granulated sugar, cinnamon and sea salt for the topping. Sprinkle evenly on top of the batter.
  6. Bake until toothpick inserted in center comes out clean, 30-35 minutes.
  7. Cool completely and cut into 16 bars.
  8. *You can substitute 25 regular unwrapped caramels but into 6 to 8 pieces each for 1 cup caramel bits.
  9. **Taste the topping mixture before topping the batter to determine how much salt you prefer.

Take my recipe with a grain of salt because I made some big changes: Used ½ tsp nutmeg instead of only a pinch in the batter, 1 C dried apples, 3.5 oz of caramels (guessing about 1/3 – 1/2 C), omitted nuts and topping. It was bland. Glad I added the nutmeg for at least some flavor. And glad I reduced the caramel because there was plenty at 3.5 oz. I C would have been way too much caramel.
