Fiesta Chicken and Black Beans

Make a colorful, healthy one-pot supper out of boneless, skinless chicken breasts by adding plump, low-sodium GOYA black beans, sweet red onion, crunchy red bell pepper, and creamy avocado. In about 30 minutes, you can have a delicious black bean chicken dinner by adding your favorite salad or cornbread.

Ingredients

  1. 2 tablespoons GOYA® Extra Virgin Olive Oil, divided
  2. 4 (5 ounce) boneless, skinless chicken breast fillets
  3. GOYA® Adobo All-Purpose Seasoning with Pepper, to taste
  4. ½ red onion, finely chopped
  5. ½ red bell pepper, finely chopped
  6. 1 (15.5 ounce) can GOYA® Low Sodium Black Beans, drained and rinsed
  7. ½ cup fresh corn kernels
  8. 1 avocado, finely chopped
  9. 1 tablespoon GOYA® Lemon Juice
  10. 1 tablespoon finely chopped fresh cilantro

Instructions

  1. Heat 1 tablespoon oil in a large skillet over medium-high heat. Season chicken with Adobo seasoning. Cook chicken in hot oil, flipping once, until golden brown on both sides and cooked through, 5 to 7 minutes. Transfer chicken to a plate; tent with foil to keep warm.
  2. Heat remaining 1 tablespoon oil in the skillet; add onions and peppers. Cook and stir until tender, about 5 minutes. Stir in black beans and corn. Continue cooking until warmed through, about 2 minutes. Remove pan from heat. Stir in avocado, lemon juice, and cilantro until combined.
  3. Divide chicken among 4 serving plates; top with black bean mixture. Serve warm.

To accommodate a low sodium diet, I omitted the seasonings and it was still delicious. Skipped the avacado but that was personal preference.

Love this recipe but changed a little, didnt add the cilantro or lemon but added some taco seasoning to replace it. Tried a similar recipe but hated the tangy taste.

Delicious! I substituted cumin in place of turmeric in the adobo seasoning, since I was out. Also I didn’t have a red onion, so I used a sweet yellow onion. It was still a wonderful meal that I will make again with less beans per my hubby’s request.

Only gave it four stars because I forgot the lime juice. Super easy and fantastic taste. It recommends pairing with salad or cornbread, but think the veggies, fruit and starch are a perfect combo with the chicken. The only thing I’d add would be a frozen marguerita. This is going into a chicken recipes and will be a favorite staple.

This is such a fantastic recipe! I often bulk it out a bit by using more onion, a couple of different colored peppers etc; adding a can of pinto beans doesn’t hurt either. More often that not I make it more as a stew – dice up the chicken into bite-sized pieces, brown them in olive oil, then throw in the rest of the ingredients (except the avocado, of course) and let it do its thing. Great with regular white rice, and the leftovers are superb in warm flour tortillas. So good!
