Fajita Vegetable Stir-Fry

Ingredients

  1. 2 tablespoons Country Crock® Spread
  2. 2 medium red or yellow bell peppers, sliced
  3. 1 medium sweet onion, cut into thin wedges
  4. 1 clove garlic, finely chopped
  5. ½ teaspoon ground cumin
  6. ¼ teaspoon chili powder
  7. 1 tablespoon lime juice
  8. 1 tablespoon chopped fresh cilantro

Instructions

  1. Melt Country Crock® Spread in 12-inch nonstick skillet over medium-high heat and cook red peppers and onion until tender and golden, about 8 minutes. Stir in garlic, cumin and chili powder and cook, stirring frequently, 2 minutes. Remove from heat, stir in lime juice and cilantro.
  2. This recipe is great served with steak, chicken, or pork. Or thinly slice steak, chicken, or pork and serve in warm corn or flour tortillas topped with Fajita Vegetable Stir-Fry.

This was a delicious, simple recipe for fajitas. We cooked strips of chicken breast for a few minutes before adding the vegetables and continued with the recipe from there. Easy and quick weeknight meal!

I served these yummy vegetables with soft tortillas, shredded lettuce and sour cream. Did I miss any meat? Nope! These veggies were cooked perfectly, and the only thing I might change is to up the amount of spices. The Country Crock actually gave this a light buttery taste. Very good, light vegetarian meal.

I used chipotle pepper seasoning which gave it a little more kick. Then I used these peppers for fajita style vegetarian nachos. They were excellent.

Made as written and this turned out perfect. I liked that the vegetables got cooked enough to get some char yet they still had some crunch to them. The flavor combo and cook time were spot on and this is one I highly recommend!
