English Muffin Breakfast Pizzas

Ingredients

  1. 6 English muffins, split in half
  2. PAM® Original No-Stick Cooking Spray
  3. ½ pound Odom’s Tennessee Pride® Mild Country Sausage, thawed if frozen
  4. ½ cup chopped yellow onion
  5. ½ cup chopped green bell pepper
  6. ½ cup chopped fresh button mushrooms
  7. 8 eggs, beaten
  8. ½ teaspoon salt
  9. ¼ teaspoon ground black pepper
  10. 1 ½ cups shredded part-skim mozzarella cheese

Instructions

  1. Preheat broiler. Place English muffin halves on baking sheet; set aside. Spray large skillet with cooking spray. Heat over medium-high heat. Add sausage, onion, bell pepper and mushrooms; cook 5 minutes or until sausage is crumbled and vegetables are tender, stirring occasionally. Drain. Remove from skillet and keep warm.
  2. Reduce heat to medium. Add eggs to same skillet; sprinkle with salt and black pepper. Cook without stirring until edges and bottom begin to set. Gently turn to scramble; continue cooking until set.
  3. Broil English muffin halves 2 minutes or until toasted. Top halves evenly with sausage mixture, scrambled eggs and cheese. Broil 3 minutes more or until cheese melts. Serve immediately.
  4. Make Ahead: Freeze pizzas on parchment lined baking sheet. Once pizzas are frozen, individually wrap and store in freezer for up to 3 months. To reheat, unwrap pizza and place on microwave-safe plate. Microwave on HIGH 2 minutes or until cheese melts. Let stand 1 minute before eating.

These were easy & really, really yummy! Made a half batch with 5 eggs, and used gluten free English muffins. I added a thin layer of Old English cheese spread on the toasted muffins before piling on the veggies, egg & mozzarella. I only had sausage patties, so I served them on the side & omitted the sausage in the veggie mix. Very delicious, but I will add sausage in toppings next time. These were a GF winner!!

04.25.17 ~ What a great way to start the morning. I downsized this to one serving skipping the mushrooms. It is delicious and very easy to prepare.

I made these for breakfast this morning, and everyone loved them. I did cut the recipe in half, and also added a ¼ teaspoon of oregano to the eggs. Next time I may add a thin smear of pizza sauce to the toasted muffin. definitely a keeper.

Toasted English Muffins are delicious for so many breakfast ideas. You don’t have to have all those ingredients listed to have an amazing breakfast. I love fried egg with melted cheese ans bacon or ham home fries on the side…OH YES
