Egg, Sausage and Cheese Breakfast Sandwich

Ingredients

  1. 4 Ball Park® Hamburger Buns
  2. 4 sausage patties
  3. 8 eggs
  4. Salt and pepper to taste
  5. 1 tablespoon olive oil
  6. 1 teaspoon Sriracha sauce, or to taste
  7. ½ cup mayonnaise
  8. 4 slices Cheddar cheese
  9. 1 cup arugula

Instructions

  1. Preheat oven to 425 degrees F. Toast buns until golden brown.
  2. Cook sausage patties in a skillet over medium heat until brown.
  3. While preparing sausage, whisk the eggs together in a bowl and season with salt and pepper.
  4. In a clean saute pan add 1 tablespoon of olive oil and scramble the eggs till cooked throughout.
  5. Combine Sriracha sauce and mayonnaise and spread on each side of the buns.
  6. Place a sausage patty onto the four bottom buns. For each sandwich, top sausage with eggs, cheese and arugula.
  7. Serve while warm.

I subbed chopped fresh baby spinach for the arugula, as it wasn’t available at my store. The toasted buns and Sriracha mayo were a delicious addition to the eggs, sausage and cheese. Thanks, Ball Park!

Easy to put together breakfast sandwich with a twist using arugula. I loved the spicy fresh bite the arugula added to the sandwich. I wasn’t a fan of using scrambled eggs. The eggs kept falling out of the sandwich. I would use a fried egg next time. I also buttered and grilled the buns instead of toasting in the oven.

7.1.18 What a nice breakfast today. I like arugula, however, I’m not sure I’d add that again, but I really enjoyed the sriracha mayo on this sandwich, excellent partner to the sausage! I did butter and toast the bun (always do that), otherwise, followed the recipe to the letter.

Pretty good sandwich. I used spinach because I don’t care for arugula and I used garlic Sriracha because that’s what I have. Really liked the mayo/sriracha sauce. Ball Park Buns are excellent.
