Easy Homemade Vanilla Ice Cream

I’ve tried a lot of Southern sweet potato pie recipes, but this has got to be my favorite! Even though I’m not a huge sweet potato fan, this pie is delicious thanks to the spices in it!

Ingredients

  1. 4 cups half-and-half or light cream
  2. 1 (14 ounce) can EAGLE BRAND Sweetened Condensed Milk
  3. 2 tablespoons vanilla extract

Instructions

  1. Combine half-and-half, condensed milk, and vanilla in a large bowl; mix well. Pour into an ice cream freezer container. Freeze according to manufacturer’s instructions.
  2. Refrigerator-Freezer Method: Omit half-and-half. Combine sweetened condensed milk and vanilla in a large bowl; mix well. Fold in 2 cups whipping cream. Pour into a 9×5-inch loaf pan or 2-quart container; cover. Freeze until firm, about 6 hours.

This has delicious flavor- love condensed milk! Yep tire was a bit off though; In the second time making it, I’m using half whole milk and half heavy cream (it’s what I have). I also combined the milk, condensed milk and 2 eggs on the stove top, cooked while continuously stirring until 165 degrees. Cooling completely, adding the vanilla and will use my Cuisinart Ice Cream Maker later!

I made this yesterday and froze it overnight. Tried some today and it’s very grainy. Not a good recipe for me.

We started to make the non ice cream maker one only to realize that we were suppose to whip the whipping cream before folding it into the sweetened condensed milk and vanilla mixture. So then we added it it our ice cream maker. What we ended up with was a delicious and creamy vanilla ice cream that pleased all 6 of us! My oldest said it had a “marshmallow vibe. We also made a mint chocolate cookie frozen custard(we dyed it purple instead of green, because why not) and made mixed cones. Super happy tummies in this house

I loved this recipe!!! I tweaked it a bit. I used only 1 Tbs of vanilla and I used 1 1/2 c heavy cream and 2 1/2 c half and half. It is AMAZING!!!

I doubled the recipe and made a few different kinds of icecream with the base recipe. Cookies and cream was a huge hit, I threw coffee grounds in another mix- that was pretty awesome. Melted peanut butter and mixed it into another little container, loved that one. Alternated chocolate and caramel (layers) in another container, another wise decision. You can get pretty creative.

I wanted ice cream. But didn’t want to cook. Found this recipe but no half and half and no can of condensed milk. But I did have in my refrigerator was whole milk and heavy whipping cream plus Caramelized condensed milk. Mixed 2cups milk and 2cups cream, caramel, vanilla plus pink salt. And YUMMY SALTED CARAMEL ICE CREAM. I used oven method to make condensed milk caramel.

This is good and is very simple to make. You can also make it with low fat half and half and low fat condensed milk and it is still very good.

After reading a couple of other reviews and knowing that we would want to freeze leftovers for a couple of days, I made the following changes: 3 cups of heavy whipping cream and 1 cup of half & half. I needed to ensure that this remained creamy without ice milk crystals and this did the trick! However, you could probably use 2 cups cream and 2 cups half & half with similar results. I did not add any additional sugar as some recipes recommended. It was quite sweet enough. We did not use add-ins as this was our 1st time making it and we’d like a good base. This will definitely work for us and we look forward to experimenting with fruits and flavors!

I will definitely make it again. I used an ice cream maker to freeze it but it was still pretty soft do we put it in the freezer overnight and the next day it was perfect. I had to double the recipe because this only makes half a gallon and i have a big family.
