Chocolate Almond Fudge

Ingredients

  1. Cooking spray
  2. 2 pounds powdered sugar
  3. 1 cup unsweetened cocoa powder
  4. ½ teaspoon salt
  5. ½ cup Almond Breeze Vanilla almondmilk
  6. ¾ cup vegan buttery sticks, softened
  7. ¾ dash almond flavor
  8. 1 cup chopped almonds

Instructions

  1. Line a 9-inch baking pan with foil; spray foil with cooking spray.
  2. In large saucepan, mix powdered sugar, cocoa, and salt. Add almondmilk and buttery sticks. Cook over medium-low heat until buttery sticks melt and mixture is all moistened, stirring frequently. Cook and stir until mixture is smooth.
  3. Remove from heat. Beat with spoon until mixture loses its shine, about 5 minutes. Stir in almond flavor and almonds.
  4. Spread in pan. Cool completely, about 2 hours.
  5. Perfect as is. Mine tasted wonderful, I used my dark cocoa and it tasted sweetened but not overly so. Took the rest to my grandkids and they are still talking about it.

Amazing! Made as gift for vegan friend who hasn’t tasted butter in 20 years – they were thrilled! I was dubious as I wasn’t sure that I had ”lost shine” but it set just fine. This time I followed recipe exactly as written and had a very hard time getting the butter to melt among all the powdered sugar. Next time I’ll melt the butter in the almond milk first, then add sugar

It tastes fabulous, but the fudge never set up for me. This may have been my fault as I didn’t use the vegan substitutes for butter and milk. And the step that says, “Take it off the heat and stir till it stops being shiny” never happened. The recipe said 5 minutes. I did it 10 minutes. But as I said, probably my fault. I’ll look for another fudge recipe.
