Beef Taco Noodle Casserole

Just a delicious improvement for the fall to the Moscow Mule! One of our favorite beverages may now be enjoyed in a delightful new way. Fresh lime juice, a tiny “bite” from the ginger, and Tito’s® vodka brighten up the warm, mild spice from the apple cider; it is the ideal amount of sweet and refreshing.

Ingredients

  1. 1 serving No-Stick Cooking Spray
  2. 6 ounces dry extra-wide egg noodles, uncooked
  3. 1 pound ground chuck beef (80% lean)
  4. 2 cups frozen Southwest mixed vegetables (corn, black beans, red peppers)
  5. 1 (10 ounce) can Diced Tomatoes & Green Chilies, undrained
  6. 1 (10 ounce) can red enchilada sauce
  7. 1 ¼ cups water
  8. 1 ¼ cups shredded Mexican blend cheese
  9. ¼ cup thinly sliced green onions
  10. 1 teaspoon Sour cream

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Spray 13×9-inch glass baking dish with cooking spray. Place uncooked noodles in baking dish.
  2. Heat large skillet over medium-high heat. Add beef; cook 5 to 7 minutes or until crumbled and no longer pink. Drain. Add vegetables, undrained tomatoes, enchilada sauce, and water to skillet; stir. Bring to a boil. Pour mixture over noodles.
  3. Cover dish tightly with foil; bake 15 minutes. Stir; sprinkle with cheese and cover with foil. Bake 10 minutes more or until noodles are tender. Sprinkle with green onions. Serve with sour cream, if desired.

I used a taco seasoning packet, canned corn, canned rinsed black beans, and chopped fresh red pepper. I didn’t have enchilada sauce so I used salsa. It was delicious and a favorite at our potluck.

I followed the recipe exactly but also added the taco seasoning. It still needed more spice. After serving I added a sprinkle of blackened seasoning only bc that’s what I had on hand. It definitely gave it more flavor. This was such an easy dish to make. I will definitely make it again but maybe add more taco seasoning.

Iy was delicious and I definitely have plans to make it again. Instead of green onions we just diced up regular onions to put in. Also we couldn’t find the frozen vegetable mix so we picked up the individual parts to create our own mix. This made a lot more so in future we’ll add more beef and noodles. I’m also addicted to cheese so I put more than required in.

I’m only doing a 4 because I changed it up just a little and feel that’s the right way to rate it, but this was amazing! I didn’t have the southwestern frozen veggies so just did corn. I also didn’t have diced tomatoes with chilies but had plain diced tomatoes so I chopped up a fresh jalapeño and threw it in with the ground beef when it was cooking. I didn’t want it to be too spicy. Everything else was the same but the water. I only added 1/2 cup because some of the reviews said it was too watery. It was very good!

This is a great, easy to make beef casserole! I think next time fresh tomato and avocado on top to finish it off will bump this dish to 4 stars. I’m excited to try again. 15 min prep. 30 min cook time. Easy as pi.

Changed it up added onion and bell peppers and swapped in tomato sauce and Mexicorn. Family loved it. May add a little green hot sauce next time.

DELICOUS, fast and very easy. I did as other suggested and Cooked the beef with taco seasoning. Then cooked the last 10mins uncovered. Boyfriend loved it and I had all the items in my pantry already.

This came out great. Of course I added more ingredients, like a can of black beans (drained), half a jalapeño pepper, three chopped cloves of garlic, a cup of Trader Joe’s fire-roasted corn and sliced black olives to the top after it cooled a bit.

I used a lb of gr beef and a lb of pork sausage. Half cooked the noodles before I put them in the casserole, a can of rotel’s, whole corn and a can of black beans. Sautéed veggies and taco seasoning. It came out really good. I’ll be making it again.

Way better than expected. I followed recipe except I didn’t realize noodles were supposed to be uncooked when added to casserole. So I cooked noodles and left out water in recipe only because noodles were done. I didn’t feel it was flavorless at all. And it tasted just as good leftover today. I will make again and send to friends. It was really good

This was an easy recipe and one that can probably be made partially in advance. I make my own enchilada sauce and, after reading some reviews that indicated there might not be enough flavor, I also made “taco seasoning 1” (from All Recipes) using spices I had on hand and added that to the beef while cooking. I only used half the beef sauce mixture with half the egg noodles and used a smaller casserole dish. The other half of the beef sauce is perfect for a burrito according to my husband. Will definitely add this to the repeat list.

This was very good. I did tweak the recipe based on some of the reviews. I added taco seasoning and I pulled the foil off for the last 10 minutes. My grocery store did not have the bag of frozen southwest veggies so I just used a fresh red pepper, can of corn and a can of black beans. It still turned out amazing.
