Tex-Mex Tomato Soup and Grilled Cheese

Ingredients

  1. 1 tablespoon olive oil
  2. 2 tablespoons butter, plus some butter at room temperature for the sandwiches
  3. 2 tablespoons fresh thyme leaves, chopped
  4. 4 cloves garlic, sliced or chopped
  5. 2 onions, chopped
  6. 1 chipotle pepper in adobo, seeded and chopped, plus 1 round tablespoon adobo sauce
  7. Salt and pepper

  9. 2 tablespoons tomato paste
  10. One 32-ounce can San Marzano tomatoes
  11. 3 cups chicken or vegetable stock
  12. 1/3 to 1/2 cup sour cream
  13. 8 slices white or whole wheat bread
  14. 8 slices pepper Jack cheese
  15. 1/4 cup chives, finely chopped, to garnish

Instructions

  1. Preheat a griddle pan for the grilled cheese over medium heat.
  2. Heat a medium soup pot over medium-high heat, add the olive oil and melt 2 tablespoons butter into the oil. Add the garlic, onions, chipotle, adobo sauce and some salt and pepper. Partially cover the pot and cook to soften, 10 minutes or so. Stir in the tomato paste and cook until fragrant, 2 minutes, then deglaze the pan with 2 cups of the chicken stock and transfer to a food processor. Add the tomatoes and process until smooth. Pour the soup back into pot and add the remainder of stock. Simmer at a low bubble while you make the grilled cheese.
  3. Lightly butter 1 side of the bread slices. Make the cheese sandwiches with, and grill until crispy and the cheese melts.
  4. Stir the sour cream into the tomato soup and serve in shallow bowls with chives to garnish, and grilled cheese on the side for dipping.

I have made this recipe at least a dozen times! It’s delicious and if you want it more Smokey or less Smokey you can adjust the amount of peppers in adobo.

We always like Rachael Ray’s recipes, but this was the worst tasting stuff ever.  This was really nasty tastting, not Mexican.  It went down the toilet!!!

Made this soup today and it’s delicious, will make again however will not use 2onions, two onions too much in my opinion. Love the kick fromthe chipotle. If you like tomato soup give this one a try.

I’ve never liked tomato soup. I decided to make it after watching Rachael Ray make it on her show. I love spicy foods and she did put chipotle chili peppers I thought I’d give it a try. I LOVED IT!!!! So did my kids. I would totally recommend this to all who have tried tomato soup and never was a fan of it. Thanks so much Rachael Ray 🙂

Ok…I’m not a fan of the tomato. However my 8 yr old daughter had been begging me to make a tomato soup. I chose this recipe and it was not only a hit with my husband, 8 & 2 yr old…I loved it!! Side note, I put aside soup prior to sour cream and used non-dairy subs for the sandwich for my daughter since she has an allergy. (She was in heaven) But the rest of us ate the recipe as is. Thanks Ray!!

Tried making the soup portion of the recipe. It was great. I used an immersion blender right in the pot rather than transferring to a food processor or blender and then having to transfer back. Intentionally left it a bit chunky to add some texture. My question – where and when does the thyme go into the recipe? The thyme appears in the ingredients, but not in the directions.This is a keeper for sure. Next time might increase the amount of chipotle and adobo used.

I will never buy canned tomato soup again! This was so easy to make and even my very picky husband who won’t eat anything new loved it. I have an immersible blender which made it even easier. It is one of those things that you keep thinking about way after it is gone. I have 3 men in the house and they fight over who can warm up the left overs. Thanks Rachael, this was truly a winner.

This is great tasting soup–my new favorite. The chipotle peppers are smoky and slightly hot which I really liked. Disregard the bad reviews posted as they are not rating the recipe but rather the website.
