Ingredients
- 6 cups low-sodium chicken stock
- One 9-ounce package cheese tortellini
- One 10-ounce package frozen chopped spinach, thawed and squeezed
- 1 to 2 teaspoons minced garlic
- One 1 (14.5-ounce) can Italian-style stewed tomatoes
- Dried basil, to taste
- Kosher salt and freshly ground black pepper
- Parmesan cheese, grated, for serving
Instructions
- Bring the stock to a simmer in a large pot over medium heat. Stir in the tortellini and simmer gently for 3 minutes. Stir in the spinach, garlic, tomatoes and dried basil. Season with salt and pepper. Return to a simmer and cook for 2 to 3 more minutes. Serve hot with the grated Parmesan cheese.

Looked for a simple, clean recipe and this fit the bill. Subbed fresh spinach, added fresh parsley, and added a Parmesan rind at the beginning. Will definitely make again, perhaps adding a bit more garlic and basil.
I did use extra tortellini, because just like raviolis, there’s never enough!!!
Like many reviewers have said. Great base recipe, but lacking in flavor. Good soup if you are not feeling well, but need nutrition. It is a very light lunch soup. It is filling as well. I added another 10oz of tortellini and more broth to increase the volume. 2, 32 oz broth containers. Added more salt, pepper, garlic, and basil to keep ratio.
This is a good base recipe but it’s best adapted to fit your preferences and you can add almost any seasonings and vegetables that you have on hand. Like many other reviewers I really upped the seasonings- I used basil, thyme, oregano, garlic, salt, and pepper. Use whatever smells good to you. I think using stock vs broth will really make or break the soup for you, stock has a lot more flavor so if you use broth you’ll need to make up for that. I subbed the frozen spinach for fresh and next time I’ll sauté some onion and celery until soft for extra flavor. Follow the package instructions for cooking the tortellini, following the recipe exactly will almost certainly result in over cooked and soggy tortellini. You could also throw in beans, carrots, zucchini, and sub the tortellini for dried pasta like shells or macaroni. Think of this as a base that you’ll never make the same way twice, the same way you might make chili. I made a huge pot to eat for lunch for the week, along with baguette, and it held up great!
Love but needs more spices
I make this fairly often but I use the meat tortellini and a few shakes of pepper flakes for some kick
So delicious and easy to make! Next time I’ll use half the amount of spinach it calls for. It just seemed like way too much.

Delicious, fast and easy.
I liked this a lot, but I used fresh baby spinach, which I added at the very end. I also added sliced chicken sausage, which is pre-cooked, but I slightly browned it first in the pot before adding the broth. A can of Fire-Roasted Diced Tomatoes may be a nice substitute for the stewed tomatoes. I would make this again.
