Green Beans and Tomatoes

Ingredients

  1. 8 slices bacon (not thick-cut), cut into 1-inch pieces
  2. 1 large onion, chopped
  3. 2 pounds green beans, trimmed
  4. Three 14.5-ounce cans whole tomatoes with juice
  5. Salt and black pepper
  6. Salt and black pepper
  7. Cayenne pepper

Instructions

  1. Add the bacon to a large Dutch oven and cook over medium heat until light golden (not crisp). Drain off the excess fat.
  2. Add the onions to the pot; cook until the bacon and onions are golden brown. Add the green beans and tomatoes, and season to taste with salt, black pepper and cayenne. Stir gently to combine. 
  3. Cover the pot, reduce the heat to low and simmer for 1 hour.

I halved the recipe, added two handfuls of shredded carrots and 2 cloves minced garlic.  I also used crushed red pepper flakes instead f cayenne because the best is more subtle.  Delicious!

So I halved this recipe but added some diced garlic cloves after sweating the onions and added 1 tsp cumin and a pinch of red pepper flakes in addition to the cayenne. Added one 14 Oz can of diced tomatoes and one small can of tomato sauce. It’s a lot better than I was even hoping for.

So we halved the recipe but I ended up using slightly over a pound of fresh cut green beans and an entire can of San Marzano whole tomatoes (around 29 oz). We purchased really good uncured bacon (don’t skimp on this ingredient) and cayenne pepper. We loved it. Totally a winner. But I like this flavor profile, so if you don’t enjoy tomatoes or green beans (or anticipate liking them together), maybe this isn’t for you but I say try it! So yum. We made salmon cakes as well. Just a weeknight comfort meal. Thanks, Ree!

I haven’t had a PW recipe I didn’t like until this one! The flavors didn’t really make sense together. This recipe also makes a very large amount. If you are a small family, I recommend halving the recipe.

These are really good. I was lazy and used frozen green beans, reasoning that it would be hard to distinguish between fresh and frozen after being cooked for an hour. I used Mexican spiced tomatoes and added a little extra chili powder, crushed garlic, and cumin. Will be making these again soon.

Loved this recipe. Made it for a crowd and everyone loved it. I did add a few splashes of balsamic for some acid. Can’t wait to make again
