Greek Grilled Eggplant Steaks

Ingredients

  1. 2 eggplants
  2. Olive oil, for drizzling
  3. Sprinkle of chili powder
  4. Sprinkle of kosher salt
  5. Sprinkle of freshly ground black pepper
  6. 8 ounces feta, diced
  7. 4 Roma tomatoes, diced
  8. 1 hothouse cucumber, seeded and diced
  9. 1 cup fresh flat-leaf parsley, chopped
  10. 1 lemon, sliced in half

Instructions

  1. Heat a grill pan over medium heat.
  2. Slice both eggplants lengthwise into 3 thick steaks. Drizzle with some olive oil and sprinkle with the chili powder, salt and pepper.
  3. Grill the eggplant steaks until tender and nicely marked by the grill pan, about 4 minutes per side.
  4. Transfer the eggplant steaks to individual serving plates and sprinkle with the feta cheese, tomatoes, cucumbers and chopped parsley and top with a squeeze of lemon. Serve.

It tasted a lot better than I thought and it is very filling! For just myself, I used 1 eggplant, a half of a cucumber and 2 tomatoes. I don’t have a grill pan or grill so I just used a regular pan and it turned out good.

Really easy and tasty. A real grill would give better flavor than a grill pan. Added paprika or chipotle pepper would give the eggplant more zing

I was looking to do something different with eggplant.  I saw this recipe and I had all the ingredients in the house.  I did the prep work in the morning, and put it in the frig.  The hardest part was peeling the eggplant!  I foullowed the recipe and I can’t tell you how delicious it was.  My neighbor came by who wasn’t hungry!  He devoured it.  This definitely gets 5 stars!!!  It was yummylicious!!!  I’m definitely making this again!!
