Ingredients
- 4 Roma tomatoes, thickly sliced
- 2 tablespoons light balsamic vinaigrette
- 2 tablespoons grated Parmesan
- 1 tablespoon freshly chopped basil leaves
Instructions
- Preheat oven to 400 degrees F. Line a baking sheet with foil.
- Place tomato slices on baking sheet. Brush with balsamic dressing and sprinkle Parmesan over tops. Top with chopped basil. Roast for 15 minutes. Serve hot.

Excellent easy recipe and very great tasting! I used my own balsamic vinaigrette dressing recipe and it worked perfectly – I think a simple drizzle of good balsamic vinegar would work well also.
These are the best roasted tomatoes I have ever had and SO EASY to prepare. I did not have fresh basil, so I used a hearty sprinkle of Italian seasoning. I also liberally sprinkled the top with parmesan-DELISH! I made these to accompany the salisbury steak from this episode.
A great side dish that is full of flavor. I made it to go with the steaks from the same episode, but it could easily go with pork, chicken or fish. Another plus is that it doesn’t take long to make and it plates really well.
TOO EASY TO BE SO GOOD! Have been making another version of these for some years. EVERYONE loves them, and I am asked for the recipe over and over. If you do decide to cook them longer, it simply concentrates the flavors, just use a lower oven temperature and be careful not to burn. I often make these without the cheese or use a small piece of goat cheese. These are a staple in our household.

Very easy indeed .. only i didnt have the requested cheese on hand so I used gorgonzola .. everone loved my refreshing tomatoe dish! a hit for sure!
Very easy to make. The flavor was great, didn’t have fresh basil, so I used dried instead. Regarding another reviewer, I’m not sure why you would say there is no shortcut in this recipe. Using the balsamic vinaigrette instead of making it yourself is a shortcut.

These tomatoes were fantastic! I’ll definitely make them again!! Since it’s summer, I had fresh basil in the garden. I used freshly grated Parmesan cheese. I was grilling out, so I cooked the tomatoes on the grill rather than roasting them inside. (Used a grill “wok.”)
The addition of Mozzarella might be good, but it would completely change the dish & make it much heavier. I like the recipe as written! Perfect!
I do not usually eat tomatoes by themselves but with this recipe I could eat them at every meal!! I definetly reccommend this recipe!!
