Puttanesca Salad

Ingredients

  1. 4 vine ripe tomatoes, seeded and chopped
  2. 1/2 red onion, chopped
  3. 3 tablespoons capers
  4. 1/2 cup kalamata olives, pitted and coarsely chopped
  5. 6 anchovies (1 tin of flat filets), chopped
  6. 1 garlic clove, chopped
  7. 1/3 cup flat-leaf parsley, a couple of handfuls, coarsely chopped
  8. Extra-virgin olive oil, for drizzling
  9. 12 to 15 fresh basil leaves: pile leaves, roll into a log and shred or tear
  10. Salt and black pepper

Instructions

  1. Combine tomatoes, onions, capers, olives, anchovies, garlic and parsley in a medium bowl. Dress with a drizzle of extra-virgin olive oil, just enough to lightly coat the salad, 1 to 2 tablespoons. Sprinkle in basil, salt and pepper, toss again and adjust seasonings, to your taste.

This is a winner! I used most of the suggestions in the reviews and added whole wheat pasta to soak up the salt.  It’s simple to make and most items are pantry friendly.  It pairs very well with a jammy red wine.

It was too salty for my taste. It may be I don’t like anchovies! I love the other ingredients, so I’m going to try another batch without the fish.

I LOVED THIS, BUT IT WAS MUCH TOO SALTY FOR MY HUSBAND AND MYSELF. I WILL MAKE THIS AGAIN AND OMIT THE SALT. THERE IS ENOUGH SALTINESS FROM THE OTHER INGREDIENTS. RR, YOU ARE STILL A WINNER IN MY EYES!

This salad lives up to the show’s name “Major Flavor”. This salad is packed with flavor and goes great with just about any dish. Would also be great as a topper for fish and chicken. Definitely don’t scrimp on the anchovies!

This salad is excellent on a bed of spring greens! I was cautious about the anchovy, and added only half, but it was very good, and next time I’ll add more. I didn’t have fresh basil, but I had some pesto in the ‘fridge, and it was so good!
