Ingredients
- 1/2 bunch asparagus, trimmed and cut into bite-size pieces
- 1 pint cherry tomatoes
- 1 medium red onion, cut into 1/2-inch rings
- 1 yellow bell pepper, quartered, seeds and ribs removed
- 1 red bell pepper, quartered, seeds and ribs removed
- 1/4 cup extra-virgin olive oil, for brushing
- Salt and freshly ground black pepper
- 1/4 cup fresh basil leaves
- 1/4 pound feta cheese
- 1 medium clove garlic, chopped
- 1 tablespoon balsamic vinegar
- 3 tablespoons extra-virgin olive oil
- Salt and freshly ground black pepper
Instructions
- Preheat grill to medium.
- In a large bowl, toss the vegetables with olive oil and season with salt and pepper. Grill the vegetables, turning occasionally, until charred and tender, about 5 to 7 minutes. Remove to a platter. Sprinkle with basil and feta.
- In a small bowl, mix garlic, balsamic vinegar, and olive oil. Season with salt and pepper and drizzle over vegetables.

This recipe was great right off of the grill and fantastic cold the next day.
As fantastic as this salad was last night, it was even better warmed up for lunch today! The veggies marinated in the dressing and allowed all of the flavors to come together! Served with a side of Costco cilantro lime shrimp. Yum!
Delicious, healthy, colorful and easily. My kind of dish. I did add zucchini and summer squash and substituted the green bell pepper for yellow, orange and red peppers. You can use whatever fresh vegetables you like. Simply fabulous!

My 15-yea-old daughter first made this salad and our family fell in love with it. She used an in-door grill so I can’t imagine what it would taste like with the smoked flavor. I made it in front of guests at a dinner party using a wok and it was just as good. One of the most requested recipes at the party!
I loved this salad! I brought it to a party (which is always risky if it’s a new recipe, but everybody LOVED it. The balsamic takes it to a whole new level! It did come out a little oily though, so next time I make it I will definitely cut back.
This recipe was awesome!! has become one of my favorites. Used less oil than called for, added additional seasoning and took out most of the garlic!
